Keto Stuffed Onion is a delicious low-carb dish featuring hollowed onions filled with a savory mixture of ground beef, cheese, and Italian seasonings, baked to perfection until tender and flavorful. This recipe is perfect for a comforting yet healthy meal option that fits into a ketogenic lifestyle.

  • Total Time: 55 minutes
  • Yield: 4 servings

Ingredients

Vegetables

  • 4 medium onions

Meat and Dairy

  • 1/2 lb ground beef
  • 1 egg
  • 2 tablespoons Parmesan cheese
  • 2 ounces cheddar cheese, cut into small cubes

Seasonings and Others

  • Italian seasoning, to taste
  • 1/4 cup crushed crackers or breadcrumbs (or almond flour for low-carb)
  • Worcestershire sauce, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to get it ready for baking the stuffed onions.
  2. Prepare Onions: Cut off the ends of each onion, peel away the outer layers, and carefully remove the inner layers to create hollow shells about 1/2 inch thick. Stand the onions upright in a casserole dish.
  3. Make Filling: In a medium bowl, combine ground beef, egg, Italian seasoning, crushed crackers or almond flour, Parmesan cheese, and Worcestershire sauce. Mix until all ingredients are thoroughly incorporated.
  4. Stuff Onions – First Layer: Press about one tablespoon of the beef mixture into the bottom of each hollowed onion, compacting it and making a small indentation in the center to hold the cheddar cheese cube.
  5. Add Cheese: Insert a small cube of cheddar cheese into the indentation inside each onion to add delicious melted cheddar surprise in the center.
  6. Fill Onions Fully: Add the remaining beef mixture on top, filling each onion to the top and covering the cheese completely. Press gently to compact.
  7. Bake: Place the casserole dish in the oven and bake the stuffed onions for 35 to 45 minutes, until the beef is fully cooked and the onions have become tender.

Notes

  • For extra moisture and juiciness in the meat mixture, feel free to add 1–2 tablespoons of beef broth.
  • If the onions start to brown too quickly while baking, loosely cover the dish with foil during the last 10–15 minutes to prevent burning.
