These Keto Pop Tart Bars offer a low-carb, sugar-free alternative to traditional pop tarts. Made with almond and coconut flours and a sugar-free raspberry jam filling, they provide a delightful combination of buttery crust, fruity sweetness, and a smooth glaze with keto sprinkles on top. Perfect for a keto-friendly dessert or snack, these bars are easy to prepare and satisfying.

  • Total Time: 1 hour 50 minutes
  • Yield: 16 bars

Ingredients

Crust and Filling

  • 2 ½ cups (280 g) almond flour
  • ⅓ cup (66.67 g) erythritol sweetener
  • 2 tablespoons (14.2 g) coconut flour
  • ¼ teaspoon salt
  • ½ cup (113.5 g) butter, melted
  • ½ teaspoon vanilla extract
  • ¾ cup (168 g) sugar free raspberry jam (can swap other flavors)

Glaze

  • ⅔ cup (83.33 g) Swerve Confectioners
  • 2 to 3 tablespoons heavy whipping cream
  • 2 teaspoons keto sprinkles

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350ºF (175ºC) and line an 8×8 inch metal baking pan with parchment paper, making sure to leave overhanging edges for easy removal of the bars later.
  2. Mix Dry Ingredients: In a large bowl, whisk together the almond flour, erythritol sweetener, coconut flour, and salt to combine evenly.
  3. Add Wet Ingredients and Form Dough: Stir in the melted butter and vanilla extract until the dough begins to clump together and can be pressed easily.
  4. Form Base Crust and Bake: Press a little over half of the dough evenly into the prepared pan, creating the bottom crust. Bake for 10 minutes, then remove from the oven and allow it to cool for 10 minutes to set.
  5. Add Jam Filling and Top Crust: Evenly spread the sugar-free raspberry jam over the cooled crust layer. Crumble and sprinkle the remaining dough over the jam to cover it. Press lightly with your hands to create an even top crust.
  6. Bake the Bars: Return the pan to the oven and bake for an additional 20 to 25 minutes, or until the top crust turns golden brown. Remove from oven and let cool completely, then refrigerate for 1 hour to firm up the bars.
  7. Prepare the Glaze: In a medium bowl, whisk together the confectioners sweetener with 2 tablespoons of heavy whipping cream. Add more cream or water as needed to reach a smooth, spreadable glaze consistency.
  8. Glaze and Decorate: Spread the glaze evenly over the chilled bars. Sprinkle 2 teaspoons of keto sprinkles on top for decoration.
  9. Set and Serve: Return the glazed bars to the refrigerator for about 30 minutes to allow the glaze to set. Remove the bars from the pan using the parchment paper edges and cut into 16 squares. Serve chilled for best texture and flavor.

Notes

  • For the sweetener, you can substitute erythritol with another keto-friendly sweetener like monk fruit or allulose if preferred.
  • Ensure the jam is sugar-free to keep this recipe keto-compliant; unsweetened or low-sugar preserves work well.
  • Press the top crust lightly to keep some texture rather than completely flattening it.
  • Refrigeration is key for firming the bars and setting the glaze properly.
  • Store leftover bars in an airtight container in the fridge for up to 5 days.
