A vibrant and bold Jalapeño Corn Coleslaw that combines a blend of shredded cabbages with sweet grilled corn and spicy jalapeños, all tossed in a creamy, tangy dressing with hints of lime, cumin, and smoked paprika. Perfect as a refreshing side dish for summer cookouts or a zesty topping for tacos.

  • Total Time: 1 hour 30 minutes
  • Yield: 6 servings

Ingredients

Vegetables and Herbs

  • 2 cups finely shredded green cabbage
  • 1 cup finely shredded Napa cabbage
  • ½ cup thinly sliced red cabbage
  • 2 large ears fresh sweet corn, kernels cut off (or 1½ cups frozen corn, thawed & patted extremely dry)
  • 1–2 fresh jalapeños, stems removed, finely minced (seeds and membranes discarded for milder heat)
  • ¼ cup red onion, very thinly sliced
  • ⅓ cup fresh cilantro leaves and tender stems, finely chopped

Dressing

  • 3 tablespoons freshly squeezed lime juice (about 1½ juicy limes)
  • ¾ cup high-quality full-fat mayonnaise (avocado or olive oil-based preferred)
  • ¼ cup plain full-fat Greek yogurt (unsweetened)
  • 1 tablespoon raw local honey or agave nectar
  • ½ teaspoon ground cumin (toasted & freshly ground)
  • ¼ teaspoon sweet smoked paprika
  • 1 small garlic clove, microplaned or finely grated
  • 1 teaspoon fine sea salt (plus more to taste)
  • ¼ teaspoon freshly cracked black pepper

Optional Garnishes

  • Crumbled cotija or feta cheese
  • Toasted pepitas
  • Lime zest
  • Extra cilantro sprigs
  • Pickled red onions
  • Lime wedges

Instructions

  1. Prepare the Cabbage: In a large bowl, combine the green, Napa, and red cabbage. Sprinkle with 1 teaspoon of fine sea salt and toss well to evenly distribute the salt. Allow the cabbage to sit at room temperature for 15 minutes to draw out excess moisture, which helps in preventing sogginess in the coleslaw.
  2. Drain Cabbage Moisture: After the resting period, gather the salted cabbage in handfuls and squeeze firmly over the sink to remove as much liquid as possible. Transfer the drained cabbage to a clean, dry large bowl to prepare for mixing with other ingredients.
  3. Cook the Corn: If using fresh corn, preheat a grill or a heavy skillet over medium-high heat. Lightly oil the corn ears to prevent sticking, then grill for 8 to 10 minutes, turning frequently, until kernels develop light charring for a smoky flavor. Let the corn cool slightly before cutting kernels off the cob. For frozen corn, ensure it is fully thawed and patted completely dry with paper towels to avoid watering down the slaw.
  4. Soak the Red Onion: Place the sliced red onion in a small bowl, cover with ice water and add a pinch of salt. Soak for 5 minutes to mellow the sharpness of the onion. After soaking, drain thoroughly and pat dry with paper towels.
  5. Toast and Grind Spices: Using a small dry skillet over medium-low heat, toast cumin seeds for 60 to 90 seconds until they become fragrant and lightly golden. Transfer the toasted seeds to a mortar and pestle or spice grinder and grind to a fine powder. Mix this ground cumin with the smoked paprika to form the spice blend.
  6. Make the Dressing: In a medium bowl, whisk together freshly squeezed lime juice, honey or agave nectar, grated garlic, toasted cumin-paprika blend, ½ teaspoon salt, and freshly cracked black pepper until the salt dissolves. Gradually add in the mayonnaise and Greek yogurt while whisking continuously for about a minute until the dressing becomes smooth and emulsified.
  7. Combine Slaw Ingredients: Add the grilled or thawed corn, soaked red onion, minced jalapeño, and chopped cilantro to the drained cabbage. Pour the prepared dressing over this mixture.
  8. Toss the Coleslaw: Gently fold the mixture together with two silicone spatulas or clean hands for approximately 45 seconds until all ingredients are evenly coated and the slaw has a glossy appearance.
  9. Chill to Marry Flavors: Cover the bowl tightly with plastic wrap and refrigerate the coleslaw for 1 to 4 hours, but not exceeding 8 hours. This resting allows the flavors to meld beautifully.
  10. Final Adjustments and Serve: Remove the coleslaw from the refrigerator about 15 minutes before serving to bring it closer to room temperature. Gently fold once more, taste, and adjust seasoning with extra lime juice, salt, or jalapeño as desired. Garnish with optional toppings such as crumbled cotija or feta, toasted pepitas, lime zest, extra cilantro, pickled red onions, and lime wedges, then serve chilled.

Notes

  • For milder heat, remove jalapeño seeds and membranes; include them for spicier slaw.
  • Grilling fresh corn imparts a smoky flavor that enhances the dish, but thawed frozen corn is a convenient alternative.
  • Salting and squeezing the cabbage draws out moisture to prevent a watery coleslaw.
  • Soaking red onions in ice water mellows their sharpness, providing a subtle crunch without overpowering the dish.
  • Use quality full-fat mayonnaise and Greek yogurt for a creamy and rich dressing.
  • The slaw can be made up to 8 hours ahead and stored refrigerated for convenient meal prep.
  • Adjust lime juice, salt, and jalapeño according to personal preference just before serving.
  • Optional garnishes add texture, color, and extra flavor, so feel free to customize.
