These Italian Crockpot Chicken Sandwiches are a flavorful, easy-to-make meal perfect for a busy day. Tender shredded chicken cooked slowly with Italian herbs, tomatoes, and garlic, served on toasted garlic bread topped with melted provolone cheese, make for a delicious and comforting sandwich experience.

  • Total Time: 6 hours 10 minutes
  • Yield: 4 sandwiches

Ingredients

Chicken and Sauce

  • 1 1/2 lbs boneless, skinless chicken breasts
  • 1 (15 oz) can petite cut diced tomatoes, drained
  • 1/2 cup good Italian dressing (e.g., Newman’s Own brand)
  • 2 tbsp tomato paste
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped

For Serving

  • 4 slices provolone cheese
  • 8 slices frozen garlic bread

Instructions

  1. Prepare Slow Cooker: Place the chicken breasts into a 6-quart slow cooker. Pour the drained diced tomatoes evenly over the chicken.
  2. Make Sauce Mixture: In a small bowl, whisk together the Italian dressing, tomato paste, sugar, salt, red pepper flakes, and minced garlic. Pour this mixture over the chicken and tomatoes in the slow cooker for full flavor coverage.
  3. Cook Chicken: Cover with the slow cooker lid and cook on LOW for 6 hours until the chicken is tender and easily shredable.
  4. Shred Chicken: Once cooked, shred the chicken directly in the slow cooker using two forks. Stir in the chopped fresh basil, then switch the slow cooker to the WARM setting to keep the chicken hot while preparing the bread.
  5. Bake Garlic Bread: Bake the frozen garlic bread according to the package directions in the oven. About one minute before baking finishes, place one slice of provolone cheese on top of four slices of the garlic bread to melt the cheese slightly.
  6. Assemble Sandwiches: Pile the shredded Italian chicken generously on the cheesy garlic bread slices. Top each with a remaining slice of garlic bread to form a sandwich.
  7. Serve: Serve the sandwiches hot and enjoy a warm, flavorful Italian-inspired meal.

Notes

  • For spicier sandwiches, increase the amount of red pepper flakes according to taste.
  • Use freshly chopped basil for best flavor; dried basil may alter the taste.
  • You can substitute provolone with mozzarella or fontina cheese if desired.
  • Leftover chicken can be stored in the refrigerator for up to 3 days and used as a salad topping or pasta addition.
  • Garlic bread can be baked ahead and kept warm in a low oven if necessary.
