A hearty and traditional Irish stew made with tender beef or lamb, slow-cooked with fresh vegetables and aromatic herbs, served alongside creamy mashed potatoes for a comforting and satisfying meal.

  • Total Time: 1 hour 5 minutes
  • Yield: 6 servings

Ingredients

Stew Meat and Seasoning

  • 2 Tablespoons Olive Oil
  • 3 Pounds Beef Stew Meat or Lamb
  • ¼ Cup All Purpose Flour
  • 2 teaspoons Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 2 teaspoons Fresh Rosemary
  • 1 teaspoon Dried Thyme

Vegetables and Broth

  • 4 Cups Beef Broth
  • 5 Each Carrots, peeled and cut into chunks
  • 1 Cup Frozen Peas
  • 2 Each Bay Leaves

Serving

  • Mashed Potatoes (for serving)

Instructions

  1. Prepare the Dutch Oven and Season Meat: Heat 2 tablespoons of olive oil in a large Dutch oven over medium-high heat. In a large ziplock bag, combine beef stew meat, flour, salt, black pepper, onion powder, garlic powder, fresh rosemary, and dried thyme. Seal the bag and shake well until the meat is evenly coated with the seasoning mixture.
  2. Sear the Meat: Once the oil is hot, add the seasoned meat to the pot. Sear the meat on all sides until browned, which locks in flavor and creates a rich base for the stew.
  3. Add Broth and Vegetables: Slowly stir in 4 cups of beef broth, continuously stirring to avoid lumps. Add the peeled and chunked carrots along with 2 bay leaves. Bring the mixture to a boil.
  4. Simmer the Stew: Reduce heat to medium-low and cover the pot with a lid. Let the stew cook for about 45 minutes, stirring occasionally to prevent sticking and ensure even cooking.
  5. Add Peas: Five minutes before the cooking time ends, stir in 1 cup of frozen peas to add freshness and color to the stew.
  6. Finish and Serve: Remove the bay leaves before serving. Serve the Irish stew hot alongside creamy mashed potatoes for a complete and comforting meal.

Notes

  • After turning off the heat, the stew will thicken as it cools. If you prefer a thicker stew, add a small amount of instant mashed potatoes to thicken to desired consistency.
  • Traditionally, Irish stew uses lamb or mutton, but beef stew meat is a practical and flavorful alternative, especially where lamb is hard to find or expensive.
