Ingredients
Meat and Broth
- 1 pound lean ground beef
- 2 cups chicken broth or beef broth
Spices and Seasonings
- 2 tablespoons taco seasoning
- 2 cloves garlic, minced
- 1/2 teaspoon ground black pepper
Beans and Vegetables
- 15 ounce can black beans, drained and rinsed
- 15 ounce can kidney beans, drained and rinsed
- 15 ounce can crushed tomatoes
- 1 cup chunky tomato salsa
- 1 cup frozen corn
Optional Toppings
- Shredded cheese
- Tortilla chips
- Fresh cilantro
Instructions
- Preheat and Brown Beef: Press the sauté button on the Instant Pot. When the display reads “hot,” add the ground beef. Cook, stirring regularly, until the beef is no longer pink. Drain any excess grease and return the beef to the pot’s inner liner.
- Deglaze the Pot: Pour in the chicken or beef broth and use a wooden spoon to scrape up any browned bits stuck to the bottom of the pot to prevent burning.
- Add Seasonings and Other Ingredients: Layer in the taco seasoning, minced garlic, ground black pepper, black beans, kidney beans, crushed tomatoes, and chunky tomato salsa. Do not stir after adding these ingredients to avoid burning during pressure cooking.
- Seal and Set Pressure Cook: Close and lock the Instant Pot lid. Ensure the pressure release valve is set to “sealing.” Press the manual or pressure cook button, set on high pressure, and adjust the timer to 5 minutes.
- Release Pressure and Stir: When cooking finishes, perform a controlled quick release by carefully turning the valve to “venting.” Once the pressure is fully released, unlock and remove the lid. Stir in the frozen corn to combine evenly into the soup.
- Serve and Garnish: Ladle the soup into bowls and serve topped with shredded cheese, tortilla chips, and fresh cilantro as desired for enhanced flavor and texture.
Notes
- Ground beef substitution: Ground turkey can be used as a leaner alternative. If using turkey, add 1 tablespoon of oil before cooking to prevent sticking.
- Taco seasoning: Use either store-bought taco seasoning or homemade blends depending on your preference for flavor intensity.
- Beans: You can substitute or mix in pinto beans or any other favorite beans for variety.
- Salsa heat level: Choose mild, medium, or hot salsa based on your desired soup spiciness.
