This Instant Pot Sesame Chicken recipe is a quick and flavorful dish featuring tender chicken breasts cooked to perfection in a savory and slightly sweet sesame sauce. Utilizing the Instant Pot makes the cooking process fast and easy, with a rich sauce thickened to just the right consistency and garnished with sesame seeds and green onions for added texture and freshness. Perfect served over rice for a comforting meal.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Chicken and Marinade

  • 2 pounds boneless, skinless chicken breasts, cut into bite-size or 1-inch pieces
  • ½ cup low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 inch ginger, peeled and grated
  • ¼ cup ketchup
  • 1 teaspoon hot sauce or sriracha

Sauce and Garnishes

  • ¼ cup honey or brown sugar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon sesame seeds, for garnish
  • Chopped green onion, for garnish

Instructions

  1. Prepare the Chicken and Sauce Ingredients: Add the cut chicken breasts into the Instant Pot, then pour in the low-sodium soy sauce, minced garlic, grated ginger, ketchup, and hot sauce or sriracha. Stir briefly to combine all the ingredients evenly.
  2. Pressure Cook the Chicken: Close the Instant Pot lid and ensure the valve is set to sealing. Select the MANUAL or PRESSURE COOK button depending on your model, and set to cook on high pressure for 3 minutes.
  3. Release the Pressure: When the cooking cycle ends, carefully perform a quick release of the pressure by turning the valve to the RELEASE position, avoiding steam contact to your face. Once the pressure is fully released, open the lid carefully.
  4. Thicken the Sauce: Turn on the SAUTE function. Add the honey or brown sugar and toasted sesame oil to the Instant Pot. In a small bowl, whisk together 1 tablespoon cornstarch and 1 tablespoon water to create a slurry. Pour the slurry into the sauce, stirring constantly with a wooden spoon until the sauce thickens to the desired consistency. Turn off the SAUTE setting.
  5. Adjust Sauce Consistency: If the sauce is not thick enough, prepare and add another tablespoon of the cornstarch slurry, stirring well until thickened.
  6. Serve and Garnish: Serve the sesame chicken hot over a bed of cooked rice. Garnish with toasted sesame seeds and chopped green onions for added flavor and texture.

Notes

  • Use low-sodium soy sauce to avoid an overly salty dish. If only regular soy sauce is available, reduce soy sauce to ¼ cup and add ¼ cup water to dilute.
  • Nutrition values provided are approximate and calculated for the chicken without rice.
  • For a thicker sauce, add cornstarch slurry gradually until reaching your preferred consistency.
  • Ensure the quick pressure release is done carefully to avoid burns from hot steam.
