Ingredients
Main Ingredients
- 1 tablespoon olive oil
- 1 ½ pounds boneless skinless chicken breast, cut into 1-inch chunks
- 1 red bell pepper, seeded and diced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 pound dried spaghetti
- 4 cups chicken broth
- 16 ounces Velveeta cheese, cubed
- 10 ounce can RoTel, drained
- 1 cup frozen peas, thawed
- Fresh parsley, for garnish
Instructions
- Start Sautéing: Press the sauté function on the Instant Pot. Once it reads “Hot,” add the olive oil to the pot.
- Brown Chicken: Add the chicken chunks to the pot and cook just until they start to brown, stirring occasionally to prevent sticking.
- Add Vegetables: Stir in the diced red bell pepper and onion. Cook for about 2 minutes until they start to soften.
- Cook Garlic: Add the minced garlic and sauté for an additional 30 seconds to release its aroma.
- Cancel Sauté: Press cancel to stop the sauté mode.
- Prepare Spaghetti: Break the spaghetti noodles in half and crisscross them over the chicken and vegetables inside the Instant Pot.
- Add Liquids and Tomatoes: Pour in the chicken broth evenly over the noodles, then top with the drained RoTel tomatoes.
- Pressure Cook: Close and lock the lid. Select manual high pressure and set the cooking time to 5 minutes. Ensure the pressure release valve is set to sealing.
- Release Pressure: When the cooking is complete, quickly release the pressure by turning the valve to venting.
- Mix in Cheese: Unlock and remove the lid. Stir in the cubed Velveeta cheese until it melts completely into the spaghetti.
- Add Peas: Stir in the thawed peas until warmed through.
- Serve: Spoon the chicken spaghetti into bowls and garnish with fresh parsley if desired.
Notes
- Veggies: Feel free to add more vegetables, like mushrooms or spinach, to boost nutrition and flavor.
- Chicken broth: Using reduced-sodium chicken broth helps control the salt content in the dish.
- Velveeta: Adjust the amount of Velveeta cheese based on how cheesy you prefer your spaghetti.
- RoTel: RoTel adds a mild heat and tang with diced tomatoes and green chilies; use mild RoTel or plain diced tomatoes for less spice.
