Ingredients
Apple Pie Filling Ingredients
- 4 medium apples (about 1.75-2 pounds), peeled, cored, and diced into 3/4-inch pieces
- 2 tablespoons unsalted butter
- 1 tablespoon maple syrup (optional)
- 1/2 lemon juice (or less to taste)
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- Pinch of cloves (optional)
- 1/2 cup water
- 2 teaspoons cornstarch
Instructions
- Prepare Apples: Peel and core the apples to yield about 1.5 pounds, then dice them into 3/4-inch pieces for even cooking.
- Combine Ingredients in Instant Pot: Add the diced apples, unsalted butter, maple syrup if using, lemon juice, cinnamon, nutmeg, cloves (if using), and water to your Instant Pot. Stir to combine.
- Seal and Cook: Close and lock the Instant Pot lid, ensuring the vent is set to the sealing position. Select the Manual or Pressure Cooker function and set the timer to 2 minutes at high pressure.
- Pressure Build-up: Allow the Instant Pot to come to pressure, which generally takes 6-8 minutes depending on your model and ingredient temperature.
- Quick Release: When cooking completes, perform a Quick Pressure Release by carefully moving the valve to venting. This should take 1-2 minutes.
- Make Cornstarch Slurry: Scoop out 4-5 teaspoons of liquid from the Instant Pot into a small bowl. Stir in the 2 teaspoons of cornstarch until completely dissolved and smooth, scraping the spoon clean to avoid lumps.
- Thicken Filling: Pour the cornstarch slurry back into the Instant Pot, scraping the bowl to get all the mixture in. Press Cancel to stop the Keep Warm setting and then press the Sauté button.
- Simmer and Thicken: Stir the mixture continuously while sautéing for 2-3 minutes until the filling thickens and becomes glossy.
Notes
- Use tart apples like Granny Smith or Honeycrisp for best flavor and texture.
- Adjust lemon juice to balance sweetness and prevent browning.
- Maple syrup adds natural sweetness but can be omitted or substituted with honey or sugar.
- Be cautious during Quick Release as hot steam escapes rapidly.
- Use the thickened filling as a topping for pancakes, waffles, or ice cream or as a pie filling.
