Hungarian Cold Cherry Soup is a refreshing and subtly sweet traditional dish made from tart cherries simmered with lemon and maple syrup, then thickened with coconut yogurt and arrowroot. Perfect as a chilled starter or dessert, this vibrant soup combines tangy fruit flavors with creamy texture and a hint of herbal freshness from optional dill garnish.

  • Total Time: 20 minutes plus chilling time
  • Yield: 4 servings

Ingredients

Soup Ingredients

  • 2 14.5 oz cans of tart cherries, with liquid (see notes)
  • 1 lemon slice
  • 1 ½ tbsp maple syrup
  • ¼ cup coconut yogurt, plus more for serving if desired
  • 2 ½ tsp arrowroot
  • Dill to serve, optional

Instructions

  1. Combine Cherries and Sweetener: Add the canned tart cherries with their liquid, the lemon slice, and maple syrup into a pot. Stir to combine all the ingredients.
  2. Simmer the Soup: Place the pot on the stove over low heat and bring the mixture to a gentle simmer. Let it cook for 5 minutes to reduce slightly and soften the cherries, enhancing their flavor.
  3. Prepare Thickening Mixture: In a small bowl, mix the coconut yogurt and arrowroot starch together until smooth and fully combined.
  4. Add Thickener to Soup: Spoon the yogurt-arrowroot mixture into the simmering pot. Stir continuously to blend the mixture into the soup evenly.
  5. Continue Simmering: Maintain the low simmer for another 2 to 3 minutes so the soup thickens and the arrowroot properly activates.
  6. Cool and Remove Lemon Slice: Take the pot off the heat, remove and discard the lemon slice, and allow the soup to cool to room temperature.
  7. Chill the Soup: Transfer the cooled soup to the refrigerator and chill thoroughly before serving to develop full flavors and a refreshing temperature.
  8. Serve: Serve the soup cold, optionally topped with fresh dill sprigs and extra dollops of coconut yogurt for garnish and added creaminess.

Notes

  • If using fresh or frozen tart cherries, pit them first and defrost if frozen. Add the cherries to the pot with just enough water to almost cover them, then simmer on low for 5 to 8 minutes until soft. After that, add the lemon slice and maple syrup and follow the recipe as directed.
  • All nutritional information are estimations and do not include optional ingredients such as the additional coconut yogurt or dill garnish.
