Ingredients
Rice and Oil
- 2 tablespoons olive oil or vegetable oil
- 1 cup long-grain white rice
Seasonings and Liquids
- 4-8 ounces canned tomato sauce (use at least 4 or up to 8 ounces)
- 2 cups water
- 1 teaspoon minced garlic (about 2 cloves)
- 2 teaspoons Caldo de Tomate (tomato bouillon)
- 1 teaspoon chili powder
Instructions
- Toast the Rice: Heat oil in a 3-quart sauté pan over medium heat. Add the rice and stir to coat it evenly in the oil. Cook while stirring frequently for 3 to 5 minutes, until the rice starts to turn a golden color, which enhances its nutty flavor.
- Add Seasonings: Stir in the chili powder, Caldo de Tomate (tomato bouillon), and minced garlic. Combine these ingredients thoroughly with the rice to distribute the flavors.
- Add Liquids: Pour in the water and the tomato sauce, stirring well to ensure everything is evenly mixed and the rice is submerged.
- Simmer the Rice: Bring the mixture to a boil, then reduce the heat to low and cover the pan. Let the rice simmer gently for about 20 minutes, or until all the water has been absorbed and the rice is tender.
- Let it Rest: Turn off the heat and keep the rice covered. Allow it to sit undisturbed for 5 to 10 minutes to finish steaming and to develop a fluffy texture.
- Fluff and Serve: Use a fork to fluff the rice gently, separating the grains before serving. Enjoy it as a side with your favorite Mexican dishes.
Notes
- About the Tomato Sauce – You can use anywhere from 4 ounces (½ cup) to 8 ounces (1 cup) of tomato sauce depending on how saucy you like your rice. Leftover sauce can be frozen for future use.
- Rinsing the rice before cooking is optional and not necessary for this recipe, but you may rinse if you prefer.
- For added nutrition and flavor, you can stir in cooked vegetables like peas and carrots before covering and simmering the rice.
