Ingredients
Meat Mixture
- 1 pound lean ground beef
- ½ cup diced yellow onion
- 2 garlic cloves, minced
- 2 Tablespoons all-purpose flour
- 1 cup beef broth
- 1 Tablespoon dried minced onion flakes
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce
- ½ teaspoon salt
- ¼ teaspoon black pepper
Casserole Mix
- 3 cups diced russet potatoes (about 3 russet potatoes)
- 1 cup diced carrots
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 2 cups shredded cheddar cheese (for topping)
Garnish
- 1 Tablespoon dried parsley (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (204°C) and prepare a baking dish for the casserole.
- Sauté Beef Mixture: In a sauté pan over medium heat, add the lean ground beef, diced yellow onion, and minced garlic. Cook for 5 to 7 minutes or until the beef is browned and the juices run clear.
- Thicken Sauce: Stir in the all-purpose flour and cook for 1 minute to remove the raw flour taste and start thickening the mixture.
- Add Seasonings and Broth: Pour in the beef broth, then add dried minced onion flakes, onion powder, garlic powder, Worcestershire sauce, salt, and black pepper. Stir the mixture well and cook for an additional minute to blend the flavors.
- Incorporate Cheese and Sour Cream: Mix in 1 cup shredded cheddar cheese and 1 cup sour cream until fully combined, creating a creamy savory filling.
- Combine with Vegetables: Transfer the meat mixture to your prepared baking dish. Add the diced russet potatoes and carrots, stirring gently to combine them evenly with the meat mixture.
- Add Cheese Topping: Evenly sprinkle the remaining 2 cups of shredded cheddar cheese over the top of the casserole.
- Bake the Casserole: Cover the baking dish with aluminum foil. Place it on the middle rack and bake for 30 to 35 minutes or until the potatoes and carrots are tender when pierced with a fork. Oven times may vary, so check doneness accordingly.
- Garnish and Serve: Once baked, remove the foil and sprinkle dried parsley over the casserole for a pop of color and added flavor. Serve warm.
Notes
- Check the doneness of potatoes and carrots by piercing them with a fork to ensure they are tender before removing the casserole from the oven.
- Use lean ground beef to reduce excess fat and keep the casserole healthier.
- Feel free to substitute the potatoes or carrots with other root vegetables for variation.
- This casserole can be prepared ahead and refrigerated before baking for convenience.
