Ingredients
Peach BBQ Sauce
- 1 (28 oz) canned peaches in juice (800 g), in juice, not syrup
- 2 garlic cloves, peeled and roughly chopped
- ⅓ cup tomato paste
- ½ cup chicken stock
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- ½ tbsp olive oil
- 1 tbsp sweet paprika
- ¼ tsp ground cumin
- ½ tsp sea salt
Chicken
- 2 lb chicken breast (900 g)
Suggested Serving
- Burger buns to serve, optional (not included in nutrition facts)
Instructions
- Make the Peach BBQ Sauce: Combine the canned peaches with their juice, garlic, tomato paste, chicken stock, Dijon mustard, apple cider vinegar, olive oil, sweet paprika, ground cumin, and sea salt in a medium saucepan. Bring the mixture to a boil over medium-high heat, then reduce to low and let it simmer gently for one hour to develop flavor.
- Blend the Sauce: After simmering, transfer the sauce to a blender or food processor and pulse until it reaches a very smooth consistency. Alternatively, use an immersion blender directly in the saucepan for ease. Set the smooth sauce aside.
- Cook the Chicken: While the sauce simmers, place the chicken breasts in a separate pot and cover with water. Bring to a boil, then reduce the heat and simmer for 30 to 40 minutes until the chicken is very tender and cooked through with no pink inside.
- Shred the Chicken: Drain the water from the chicken, transfer the chicken breasts onto a cutting board, and shred them using two forks—one to hold the chicken steady and the other to pull it apart into fine pieces.
- Combine Chicken and Sauce: Transfer the shredded chicken into the peach BBQ sauce and mix thoroughly to coat each piece well with the sauce.
- Serve: Serve the peach BBQ pulled chicken as is, or use it as a filling for sliders or burger buns if desired. Enjoy!
Notes
- Use canned peaches in juice rather than syrup to avoid added sugars.
- The sauce can be made ahead and refrigerated for up to 3 days or frozen for longer storage.
- For a spicier kick, add a pinch of cayenne pepper or chili flakes to the sauce before simmering.
- Optional buns are not included in the nutritional information to keep the recipe low in calories and carbs.
- Shredded chicken can also be used for salads, wraps, or as a topping for baked potatoes.
