Ingredients
Chia Pudding Base
- 3 Tbsp chia seeds
- 1 regular lime or 2 key limes, juice and zest
- 1/2 cup plain Greek yogurt
- 1/2 cup unsweetened almond milk (or other milk)
- 1 tsp pure maple syrup
- 1/4 tsp matcha powder (optional)
Topping (Optional)
- 1/4 cup graham crackers, crumbled
Instructions
- Combine Ingredients: In a bowl, jar, or container, add chia seeds, lime juice, lime zest, plain Greek yogurt, unsweetened almond milk, pure maple syrup, and matcha powder if using. Stir thoroughly to ensure all ingredients are well mixed and chia seeds are evenly suspended.
- Refrigerate: Cover the container and place it in the refrigerator. Allow the chia mixture to soak and thicken for at least 2 hours, or ideally overnight, so the chia seeds absorb the liquid and form a pudding-like consistency.
- Stir and Serve: Remove the pudding from the fridge, give it another good stir to break up any clumps. Serve the pudding topped with the optional crumbled graham crackers for added texture and flavor.
Notes
- You can use either key limes or regular limes. Use one regular lime or two key limes. If using key limes, consider using zest from only one lime to avoid bitterness.
- For a vegan version, substitute Greek yogurt with a vegan yogurt alternative or omit the yogurt entirely, increasing chia seeds by 1 tablespoon for thickening.
- To make this recipe gluten-free, omit the graham crackers or replace them with a gluten-free topping such as gluten-free granola.
- Matcha powder is optional and adds color and a slight caffeine content to the pudding, without altering flavor significantly.
- Store pudding in an airtight container in the refrigerator for up to 5 days.
