Ingredients
Main Ingredients
- 2 cans (5 oz each) tuna, drained
- 1/3 cup celery, diced (1 small stalk)
- 1/3 cup finely chopped onion
- 1 cup chopped sweet tart apple (from 1 small Honeycrisp or Fuji apple)
- 1/3 cup toasted pecans or walnuts, chopped
Dressing
- 1/3 cup plain Greek yogurt (2% or full fat)
- 1 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1/2 tbsp Dijon mustard (preferably whole grain)
- 1/2 tsp fine sea salt
- Freshly ground black pepper, to taste
Instructions
- Prepare Tuna: Drain the cans of tuna thoroughly. Flake the tuna with a fork into a medium mixing bowl to break it up into smaller pieces for easier mixing.
- Add Vegetables and Nuts: Add the diced celery, finely chopped onion, chopped apple, and toasted pecans or walnuts to the bowl with the tuna. Mix gently to combine all the ingredients evenly.
- Mix Dressing: In a small bowl, whisk together the Greek yogurt, extra virgin olive oil, fresh lemon juice, Dijon mustard, fine sea salt, and freshly ground black pepper until smooth and well combined.
- Combine Salad and Dressing: Pour the dressing over the tuna mixture and mix thoroughly to ensure every bite is coated with the creamy dressing. Taste the salad and adjust seasoning by adding more salt, pepper, or extra yogurt and olive oil for desired moisture.
- Serve and Store: Serve immediately with crackers, cucumber slices, or between slices of whole grain bread for a sandwich. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
Notes
- Use full-fat or 2% Greek yogurt depending on desired creaminess and fat content.
- To toast nuts, lightly heat them in a dry skillet over medium heat for 3-5 minutes until fragrant.
- Choose tart apples like Honeycrisp or Fuji for a pleasant balance of sweetness and acidity.
- Adjust seasoning carefully; lemon juice brightens flavors, so add gradually.
- For a lower-fat version, use nonfat Greek yogurt and reduce olive oil.
- This salad keeps well for up to 3 days refrigerated but is freshest eaten within 24 hours.
