Ingredients
Caramelized Onions
- 2 large yellow onions, peeled and thinly sliced
- 2 tablespoons extra virgin olive oil
Horseradish Sauce
- ¼ cup mayonnaise
- ¼ cup sour cream
- 2-4 tablespoons prepared horseradish
- Salt and pepper to taste
Sliders
- 12 Kings Hawaiian rolls or other slider rolls
- 1 lb sliced deli roast beef, shaved or chipped
- ½ lb sliced horseradish cheddar cheese or cheddar, Swiss, provolone
- ½ cup crispy fried onions (optional)
Butter Topping
- ¼ cup salted butter, melted
- ½ teaspoon ground mustard (spicy brown or dijon)
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- 1 tablespoon sesame seeds
Au Jus (Optional)
- 1 cup beef bone broth
- 1 teaspoon Worcestershire sauce
- Kosher salt to taste
Instructions
- Prepare the onions: Peel, halve, and thinly slice the onions. Heat a large skillet over medium-low heat, add olive oil and onions, tossing to coat. Cook for 5 minutes, then reduce heat to lowest setting and cook 30-40 minutes, stirring every 5 minutes until onions are golden brown and jammy. If onions start burning, add ¼ cup water to loosen browned bits. Remove from heat and let cool.
- Make the horseradish sauce: While onions cook, whisk together mayonnaise, sour cream, prepared horseradish, salt, and pepper. Adjust seasoning to taste.
- Preheat and prepare pan: Preheat oven to 350°F (175°C). Line a 9×13” pan or small sheet pan with parchment paper.
- Slice rolls: Carefully slice Hawaiian rolls in half lengthwise through the soft centers, keeping the loaf intact.
- Assemble slider bases: Place bottom halves of rolls in the pan. Spread horseradish sauce generously over the bottoms.
- Add fillings: Layer the sliced roast beef evenly over the horseradish sauce, then top with the caramelized onions. Cover completely with slices of horseradish cheddar cheese, letting some cheese hang over the edges.
- Top the cheese: Spread more horseradish sauce over the cheese, then sprinkle with crispy fried onions if using.
- Replace tops: Place the top halves of the rolls on the sliders. Gently press down and slightly pull apart the tops to create cracks, allowing butter to seep in.
- Prepare butter mixture and top sliders: Melt butter and stir in ground mustard, onion powder, garlic powder. Brush or pour mixture evenly over the tops of the slider buns. Sprinkle sesame seeds on top.
- Bake sliders: Cover the pan lightly with foil. Bake in the oven for 10 minutes, then remove foil and bake another 10 minutes until buns are golden brown.
- Make au jus: While sliders bake, heat beef bone broth with Worcestershire sauce over medium heat. Season with kosher salt to taste and keep warm.
- Serve: Use a serrated knife to carefully slice sliders through the buns, pressing down through bottoms. Use a spatula to lift sliders from the pan. Serve hot with au jus in cups for dipping.
Notes
- Enjoy sliders hot or at room temperature.
- Best served within two hours of baking as buns may get soggy over time; storing after baking is not recommended.
- You can assemble the sliders in the pan up to 8 hours ahead and refrigerate covered. When ready to serve, bake covered and add an additional 5 minutes if baking directly from the fridge.
