Ingredients
Cauliflower Steaks
- 1 Large Head of Cauliflower
- 1 Tablespoon Mild Tasting Oil (such as vegetable or canola oil)
Toppings
- 1/4 Cup Mayonnaise
- 1 Teaspoon Chili Powder
- 1/2 Cup Cotija Cheese, crumbled
- 1/3 Cup Fresh Cilantro, chopped
- Lime wedges, for serving
Instructions
- Preheat Grill: Preheat your grill to medium heat to ensure an even cooking temperature for the cauliflower steaks.
- Prepare Cauliflower: Remove the leaves and bottom stem of the cauliflower so it can stand upright on a cutting board. Carefully use a sharp knife to slice the cauliflower into 4 thick steaks by removing the rounded edges on two sides.
- Oil the Steaks: Brush both sides of each cauliflower steak with the tablespoon of mild tasting oil to prevent sticking and promote grilling.
- Grill Cauliflower: Place the steaks on direct heat and grill covered for 5-6 minutes until the cauliflower develops a nice char. Flip the steaks, cover again, and grill the other side for 5-6 minutes.
- Check Tenderness: Test the steaks with a fork for tenderness. For a softer texture, move them to indirect heat, cover, and continue grilling for an additional 10 minutes until desired softness is achieved.
- Add Toppings: Remove the cauliflower steaks from the grill and brush each with mayonnaise evenly on top.
- Season: Sprinkle the mayonnaise-coated steaks with chili powder, crumbled Cotija cheese, and freshly chopped cilantro.
- Serve: Squeeze fresh lime juice over each steak and serve immediately to enjoy the bold Mexican-inspired flavors.
Notes
- You can use any mild oil such as canola, vegetable, or avocado oil for brushing the cauliflower.
- If Cotija cheese is unavailable, crumbled feta can be a substitute, though the flavor will differ.
- Adjust the amount of chili powder based on your preferred spice level.
- If you don’t have access to a grill, you can roast the cauliflower steaks in an oven at 425°F (220°C) to achieve similar results.
