Ingredients
Chicken and Marinade
- 4 boneless, skinless chicken breasts
- 1 cup balsamic vinaigrette or marinade
Toppings
- 1 package (8 oz) sliced fresh mozzarella cheese
- 2 large avocados, cored and sliced
- 2 large slicing tomatoes, sliced
- Chopped fresh basil, for garnish
- Balsamic glaze, for drizzle
Instructions
- Pound the Chicken: Place the chicken breasts on a cutting board and cover with plastic wrap or parchment paper. Use a meat tenderizer to pound each breast to an even thickness of about 1 inch to ensure even cooking.
- Marinate: Put the pounded chicken breasts into a gallon-size Ziploc bag. Pour in the balsamic vinaigrette or marinade, seal the bag, and refrigerate for at least 30 minutes, up to 1 hour, to infuse flavor.
- Prepare for Grilling: When ready to cook, remove the chicken from the fridge and let it come to room temperature for about 10 minutes. Drain and discard the excess marinade from the bag.
- Heat the Grill: Preheat your grill or grill pan to medium-high heat and lightly grease it with oil or cooking spray to prevent sticking.
- Grill the Chicken: Place chicken breasts on the hot grill. Cook for 8-10 minutes on each side or until the internal temperature reaches 165°F (74°C), ensuring they are fully cooked and juicy.
- Melt the Mozzarella: Remove chicken from grill and immediately top each breast with 2-3 slices of fresh mozzarella. Cover loosely with foil and let sit for a few minutes to allow the cheese to melt gently.
- Assemble the Toppings: Top each chicken breast with fresh avocado slices and tomato slices. Garnish with chopped fresh basil and drizzle with balsamic glaze for a vibrant finishing touch.
Notes
- If you prefer thinner pieces without pounding, slice each chicken breast horizontally to create two thinner pieces, doubling the servings.
- The balsamic glaze adds a sweet, tangy finish that complements the creamy avocado and mozzarella beautifully.
- Discard marinade after use to avoid contamination; it is only for flavor infusion during marinating.
- Use fresh, ripe avocados and tomatoes for the best texture and flavor contrast.
- For a dairy-free version, omit the mozzarella and add extra avocado for creaminess.
