- 4 tbsp Unsalted Butter, divided
- 1 tsp Salt
For the Filling
- ⅛ cup Unsweetened Cocoa Powder
- ⅛ cup Heavy Whipping Cream
- ⅓ cup Semi-Sweet Chocolate Chips
- ¼ cup Graham Cracker Crumbs
- 2 tbsp Granulated Sugar
- 2 tbsp Unsalted Butter, melted
- ½ tsp Vanilla Extract
- Pinch of Salt
For the Meringue Topping
- 2 large Egg Whites, room temperature
- ½ cup Granulated Sugar
- ⅛ tsp Cream of Tartar
- ⅛ tsp Salt
- ½ tsp Vanilla Extract, divided
Instructions
- Dough Preparation: In a stand mixer bowl, combine lukewarm milk, lukewarm water, instant yeast, granulated sugar, and all-purpose flour. Add melted unsalted butter and salt. Mix until all ingredients are well combined. Switch to the dough hook attachment and knead for 6-8 minutes until the dough is smooth and elastic. Cover the dough and let it rest for 15 minutes to allow it to rise slightly.
- Filling Preparation: In a small saucepan over low to medium heat, whisk together unsweetened cocoa powder, heavy whipping cream, semi-sweet chocolate chips, and granulated sugar. Add melted unsalted butter, vanilla extract, and a pinch of salt. Stir continuously until the mixture is smooth and fully combined, then remove from heat. Allow the filling to cool slightly, then fold in graham cracker crumbs for added texture.
- Assembly: On a lightly floured surface, roll the dough into a 10 by 16-inch rectangle. Brush the dough generously with melted butter, then evenly spread the cooled chocolate filling over the dough, leaving a small border around the edges. Sprinkle additional graham cracker crumbs on top for crunch. Roll the dough tightly from the long side into a log shape. Slice the roll into 8-10 even pieces and place them spaced evenly in a greased baking pan.
- Baking: Preheat your oven to 350°F (175°C). Bake the assembled rolls for 25 to 28 minutes or until they turn golden brown on top and are cooked through. Remove from the oven and let cool in the pan for about 10 minutes before applying the meringue topping.
- Meringue Topping: Using a double boiler, gently heat the egg whites and granulated sugar while whisking continuously until the mixture is warm and the sugar dissolves completely. Transfer this mixture to a stand mixer and beat on high speed until stiff, glossy peaks form. During beating, add cream of tartar, salt, and half of the vanilla extract to stabilize and flavor the meringue.
- Finalizing Rolls: Spread the prepared meringue evenly over the warm baked rolls. Using a kitchen torch or placing under a broiler briefly, toast the meringue until it is golden brown and slightly crisp on top. Serve the Gooey S’mores Rolls warm for the best experience.
Notes
- Ensure all liquids are lukewarm to activate the yeast properly for optimal dough rise.
- Do not overheat the egg whites during meringue preparation to avoid cooking them.
- Use a kitchen torch carefully to avoid burning the meringue; alternatively use the oven broiler for toasting.
- Allow rolls to cool slightly before adding meringue to prevent it from melting too much.
- You can store leftover rolls in an airtight container for up to 2 days; reheat gently before serving.
