Ingredients
Chicken
- 3-4 organic chicken breasts, trimmed and tenderized to 1/2-inch thick
- 1/2 cup arrowroot starch powder
- 3/4 cup cassava flour
- 1 tsp garlic powder
- 2 tsp chili powder
- 1 tsp sea salt
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/4 tsp ground pepper
- 3-5 tbsp avocado oil
- 2 eggs
Hot Honey Sauce
- 1/4 cup hot sauce (Cholula, Frank’s, or any preferred hot sauce)
- 2-3 tbsp honey
Sliders
- Slider buns
- Lettuce
Instructions
- Prepare coating stations: Set out three wide, shallow bowls. Place the arrowroot starch powder in the first bowl. Whisk the two eggs in the second bowl. In the third bowl, combine cassava flour, garlic powder, chili powder, sea salt, paprika, onion powder, and ground pepper; whisk to mix evenly.
- Slice and tenderize chicken: Trim and tenderize each chicken breast to about 1/2-inch thickness, then slice each breast in half to create smaller portions perfect for sliders.
- Dredge the chicken: Dip each chicken half first into the arrowroot starch, then into the whisked eggs, and finally coat thoroughly with the seasoned cassava flour mixture, ensuring an even layer for crispiness.
- Pan-fry the chicken: Heat 3-5 tablespoons of avocado oil in a skillet over medium heat. When the oil is hot but not smoking, add the prepared chicken pieces. Cook for about 3-5 minutes on each side until golden brown and cooked through. Repeat until all chicken is cooked.
- Make the hot honey sauce: In a large bowl, whisk together hot sauce and honey in a 2:1 ratio (e.g., 1/4 cup hot sauce to 2-3 tablespoons honey) until well combined.
- Toss chicken in sauce: Add the crispy chicken pieces to the hot honey sauce and toss until each piece is fully coated in the spicy-sweet glaze.
- Assemble sliders: Place a piece of coated chicken on each slider bun, add lettuce or desired toppings, and serve immediately for a delicious, flavorful bite.
Notes
- Feel free to customize your sliders with additional toppings like pickles, aioli, mayonnaise, or your favorite sauces to enhance the flavor experience.
- Ensure chicken is cooked fully through; internal temperature should reach 165°F (74°C).
- Use avocado oil or any high smoke point oil suitable for frying for best results.
- For extra crispiness, you can double-dredge the chicken by repeating the egg and cassava flour coating step.
