Ingredients
Gingerbread Syrup
- 1 cup dark brown sugar
- 1 cup water
- 1 tbsp gingerbread spice
- 1 tsp vanilla extract
Gingerbread Martini
- 1 oz gold or dark rum
- 2 oz Bailey’s Irish Cream
- 1 oz gingerbread syrup
- 1 oz almond milk or heavy cream
- 1-2 dashes chocolate bitters (optional)
- Ice
Toppings (optional)
- Gingerbread cookie rim (crushed cookies and agave syrup)
- Whipped cream
- Gingerbread spice for garnish
Instructions
- Make the Gingerbread Syrup: In a medium saucepan, combine dark brown sugar, water, and gingerbread spice. Bring to a boil over medium heat while stirring constantly until the sugar fully dissolves.
- Simmer the Syrup: Reduce the heat to low and let the mixture simmer gently for 10 minutes, stirring occasionally to prevent sticking and ensure flavors meld.
- Add Vanilla: Remove the saucepan from heat and stir in the vanilla extract for added depth of flavor. Pour the syrup into a glass jar and refrigerate. It can be stored up to two weeks.
- Prepare the Glass: If using a cookie rim, crush your choice of crunchy cookies (like Biscoff, gingerbread, or ginger snap) finely, place them on a plate. Dip the rim of your martini or coupe glass into agave syrup, then into the crushed cookies to coat. Set aside.
- Mix the Cocktail: In a cocktail shaker, add rum, Bailey’s Irish Cream, gingerbread syrup, almond milk or heavy cream, and chocolate bitters if using. Add a handful of ice.
- Shake Well: Shake vigorously for 5-10 seconds until the mixture is very chilled and well combined.
- Strain and Serve: Strain the cocktail into the prepared glass, ensuring a smooth pour without ice shards.
- Garnish: Top with whipped cream and dust with gingerbread spice if desired. Serve immediately and enjoy the festive flavors.
Notes
- Cookie Rim: Use any 1-2 crunchy cookies like Biscoff, gingerbread, or ginger snaps. Crush finely and use agave syrup to help the crumbs stick to the glass rim for a decorative and flavorful touch.
- The gingerbread syrup stores well in the refrigerator for up to two weeks, making it easy to prepare in advance for holiday entertaining.
- For a dairy-free option, almond milk can be used instead of heavy cream.
- Chocolate bitters are optional but add a nice depth and balance to the sweetness of the cocktail.
