Ingredients
For the Dough:
- 1 cup cottage cheese (full-fat or low-fat)
- 1 cup self-rising flour (or 1 cup all-purpose flour + 1½ tsp baking powder + ¼ tsp salt)
- 1 large egg
- 2 tbsp grated Parmesan cheese
- 1 tsp garlic powder
- ½ tsp salt
Optional Topping:
- 1 egg, beaten (for egg wash)
- Extra grated Parmesan cheese or garlic seasoning
Instructions
- Prep the Dough: Blend the cottage cheese in a blender or food processor until smooth, about 30 seconds. In a large bowl, combine the blended cottage cheese, egg, self-rising flour, Parmesan cheese, garlic powder, and salt. Mix until a sticky dough forms.
- Shape Bagels: Lightly flour your work surface. Divide the dough into 4 equal portions. Roll each portion into a 6 to 7 inch long rope, then connect the ends of the rope to form a bagel shape. Place each bagel onto a parchment-lined baking sheet.
- Add Toppings: Brush each bagel with the beaten egg wash. Sprinkle extra grated Parmesan cheese or garlic seasoning on top if desired to enhance flavor and texture.
- Bake: Preheat your oven to 375°F (190°C). Bake the bagels for 22 to 25 minutes until they are golden brown and firm to the touch. For a crispier crust, you can broil the bagels for an additional 1 to 2 minutes at the end of baking.
- Serve: Allow the bagels to cool for 5 minutes before slicing. Enjoy them warm with butter, cream cheese, or use them as sandwich bread for your favorite fillings.
Notes
- Gluten-Free Option: Use a 1:1 gluten-free flour blend that already includes baking powder and salt.
- Dairy-Free Option: Substitute dairy-free cottage cheese and replace Parmesan cheese with nutritional yeast.
- Flavor Variations: Add 1 tsp dried oregano, rosemary, or Italian seasoning to the dough; sprinkle in red pepper flakes for a spicy twist.
- Low-Carb Option: Use almond flour, starting with ¾ cup and adjusting the amount as needed for dough consistency.
- Storage: Store bagels in an airtight container at room temperature for up to 2 days, refrigerate for up to 5 days, or freeze sliced bagels for up to 3 months. Reheat in a toaster oven before serving.
