Ingredients
Dry Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Wet Ingredients
- 3/4 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/3 cup white sugar
- 1 1/2 cups smooth peanut butter*
- 1 large egg
- 1 large egg yolk (in addition to the egg, discard the white)
Topping
- 7 oz jar marshmallow fluff
Instructions
- Prepare Oven and Pan: Preheat the oven to 350°F and position the oven rack in the middle. Line a 9×13 inch pan with parchment paper, leaving an overhang on the edges, or line it with aluminum foil and lightly grease.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt to combine evenly.
- Cream Butter and Sugars: In a large bowl, beat the softened butter, brown sugar, and white sugar together until soft and fluffy.
- Add Peanut Butter and Eggs: Beat in the smooth peanut butter until incorporated. Then add the whole egg and additional egg yolk, mixing until smooth and uniform.
- Incorporate Dry Ingredients: Gradually mix in the flour mixture in halves with the mixer on low speed until fully combined.
- Reserve Dough and Press Base: Remove about 1 cup of dough and set aside. Press the remaining dough evenly into the bottom of the prepared pan to form the base layer.
- Bake Base Layer: Bake the peanut butter base for 25 minutes until it looks set and baked through.
- Add Marshmallow Topping: Remove the pan from the oven and keep the oven on. Carefully spread the entire jar of marshmallow fluff evenly over the base.
- Top with Reserved Dough: Pinch off pieces of reserved dough, flatten them slightly to about 1 inch size, and scatter them over the marshmallow layer until approximately 80-90% coverage.
- Bake Final Layer: Return the pan to the oven and bake for an additional 10 minutes until the peanut butter dough topping is set.
- Cool Bars: Remove from oven and allow bars to cool at room temperature for at least 1 hour to set before slicing.
- Slice and Serve: Use the parchment paper overhang to lift bars from the pan onto a cutting board. Lightly grease a sharp, thin knife with non-stick spray to prevent sticking and slice into 15 bars.
Notes
- Avoid natural or homemade peanut butter without stabilizers as it can separate causing too much or too little oil. If using crunchy peanut butter, increase quantity to 1 3/4 cups.
- Metal pans produce crispier edges, while glass pans yield softer edges.
- Store bars in an airtight container at room temperature for up to 5 days.
