Ingredients
Chicken and Marinade
- 1 ¼ pounds boneless, skinless chicken breasts
- 2 tablespoons avocado oil
- 2 ½ tablespoons lime juice (from 2 limes)
- 1 tablespoon soy sauce or tamari
- 1 tablespoon honey
- 2 tablespoons taco seasoning
- 1 teaspoon Worcestershire sauce
- ¾ teaspoon salt
Topping Sauce
- ¼ cup ranch dressing
- ¼ cup mild salsa
- 2 tablespoons sour cream
- 1 tablespoon finely chopped cilantro plus more for serving
- ½ tablespoon lime juice
- ¼ teaspoon salt
Additional
- 4 slices Colby Jack cheese
Optional Toppings
- Tortilla chips
- Pico de gallo
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the chicken later.
- Prepare Chicken: Cut the chicken breasts into four equal pieces. Place them between plastic wrap and gently pound with a meat mallet until they are about 1 inch thick for even cooking.
- Make Marinade and Marinate Chicken: In a large bowl, whisk together avocado oil, 2 tablespoons lime juice, soy sauce, honey, taco seasoning, Worcestershire sauce, and ½ teaspoon salt. Submerge the chicken pieces in this marinade, making sure they are fully coated. Refrigerate and marinate for 15 minutes, then flip the chicken and continue marinating for an additional 15 to 45 minutes for maximum flavor infusion.
- Bake Chicken: Remove the chicken from the marinade, letting excess drip off, and place the pieces spaced apart in a 13 x 9-inch baking dish. Bake in the preheated oven for 20-25 minutes or until the chicken is thoroughly cooked and juices run clear.
- Prepare Topping Sauce: While the chicken bakes, whisk together ranch dressing, mild salsa, sour cream, finely chopped cilantro, the remaining ½ tablespoon lime juice, and ¼ teaspoon salt in a medium bowl to create a creamy, tangy sauce.
- Top Chicken and Melt Cheese: Take the baked chicken out of the oven and brush each piece generously with 1-2 tablespoons of the ranch salsa sauce. Then, place one slice of Colby Jack cheese atop each piece. Return the dish to the oven and bake for another 3-5 minutes or until the cheese is melted and slightly bubbly.
- Serve: Serve the Fiesta Lime Chicken over a bed of crushed tortilla chips. Accompany with any leftover sauce, pico de gallo, extra cilantro, and Mexican rice for a full festive meal.
Notes
- For spicier flavor, add chopped jalapeños or a pinch of cayenne pepper to the marinade.
- To make this dish dairy-free, substitute cheese with a vegan alternative or omit altogether.
- Chicken can be marinated up to 2 hours for deeper flavor, but avoid exceeding this to maintain texture.
- Use fresh lime juice for the best bright, tangy flavor.
- Leftovers store well in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in the oven or microwave to maintain cheese melt and chicken juiciness.
