Ingredients
Main Ingredients
- 1 tsp olive oil
- 2 scallions, diced
- 8 oz (226.8 g) baby spinach, roughly chopped
- 1 large egg
- 1 cup (248 g) ricotta cheese
- 2 cloves garlic, minced
- 1/2 cup (56 g) almond flour
- 1/3 cup (33.33 g) grated parmesan cheese
- 1/2 cup (56 g) shredded mozzarella cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tsp Italian herb seasoning
- 1/4 tsp chili pepper flakes
Instructions
- Sauté Scallions and Spinach: In a medium skillet over medium heat, add 1 teaspoon of olive oil and sauté the diced scallions for 1 minute until fragrant. Add the roughly chopped spinach and stir until mostly wilted. Transfer to a plate to cool slightly.
- Prepare Spinach Mixture: Once cooled, squeeze out any excess liquid from the spinach using a paper towel to avoid soggy fritters.
- Mix Fritter Batter: In a large bowl, whisk together the egg, ricotta cheese, and minced garlic until smooth. Add the sautéed spinach, almond flour, grated parmesan, shredded mozzarella, salt, black pepper, Italian herb seasoning, and chili pepper flakes. Mix thoroughly until all ingredients are well incorporated.
- Form Patties: Portion the mixture into approximately 3-tablespoon-sized portions. Shape each portion into a ball, then flatten gently to form patties. This recipe yields at least 8 fritters.
- Cook on Stovetop: Heat 1 tablespoon of olive oil over medium-high heat in a large skillet or griddle pan. Place the fritters in the pan and cook each side for 3-4 minutes until golden brown. Adjust the heat down if they begin to brown too quickly to ensure they cook through without burning.
- Air Fryer Option: Preheat your air fryer to 400°F (200°C). Place the patties in a single layer in the basket, working in batches if necessary. Lightly spray the fritters with olive oil and air fry for 10 minutes, flipping them halfway through cooking to achieve an even golden crust.

- Store any leftover fritters in an airtight container in the refrigerator for up to 3 days.
- Frozen spinach can be used if fresh is unavailable — ensure it is thoroughly thawed and excess liquid squeezed out to maintain fritter texture.
- If almond flour is not available, breadcrumbs can be substituted in equal measure.
