Ingredients
Crust
- 1 & 1/2 cups graham cracker crumbs (or 1 sleeve graham crackers)
- 4 ounces unsalted butter, melted
Filling
- 8 oz cream cheese, softened
- 14 ounce can sweetened condensed milk
- ¾ cup fresh squeezed key lime juice (about a pound of key limes or good bottled key lime juice)
- 8 oz whipped topping, plus more for garnish
Instructions
- Prepare the crust: Mix the graham cracker crumbs with the melted butter until well combined. Set this mixture aside to use as a topping later.
- Cream the cheese: In a large mixing bowl, beat the softened cream cheese with an electric mixer until it becomes smooth and free of lumps.
- Add sweetened condensed milk: Pour the sweetened condensed milk into the bowl and continue mixing until the mixture is smooth and homogenous.
- Incorporate key lime juice: Add the fresh key lime juice to the mixture and blend until fully combined for that signature tart flavor.
- Fold in whipped topping: Gently fold the whipped topping into the key lime mixture until there are no streaks left, keeping the filling light and airy.
- Fill molds: Spoon the key lime filling into individual silicone cups or paper cupcake liners, filling each about ¾ of the way full.
- Top with crust: Sprinkle the prepared graham cracker crumb mixture generously over the top of each filled cup.
- Freeze to set: Arrange the cups on a sheet tray and place them in the freezer for at least 4 hours or until completely firm.
- Unmold and serve: Carefully remove the pies from the molds by dipping the bottom half of the mold into warm water for a few seconds to loosen. Serve them graham cracker side down, garnished with extra whipped topping and optional key lime slices. Enjoy!
Notes
- Using silicone molds makes it easier to remove the pies, though paper cupcake liners will also work.
- Regular graham crackers can be used in lieu of honey graham crackers without affecting the taste significantly.
- Bottled key lime juice is a good substitute if fresh key limes are unavailable.
- These mini pies can be stored in the freezer for up to 3-4 months without losing quality.
- You can double the recipe to make more servings, requiring multiple cupcake pans or molds.
