Ingredients
For the Filling
- 2 cups cooked chicken breast, shredded or diced
- 1 cup shredded cheddar cheese
- 1 cup diced bell peppers (mild or spicy to taste)
- 1/2 cup chopped onions, sautéed until soft
- 1 teaspoon cumin
- 1 teaspoon chili powder
For the Assembly
- 4 small flour tortillas (or cut larger ones into squares)
- 2 tablespoons butter or oil for brushing
Optional Toppings
- 1 cup sour cream for dipping
- 1/4 cup fresh cilantro, chopped
Instructions
- Prepare the Vegetables: Heat a large skillet over medium heat and add oil. Cook the chopped onions and diced bell peppers for 4–5 minutes, stirring occasionally until they are softened and lightly golden in color.
- Mix the Filling: Transfer the sautéed vegetables to a mixing bowl. Add the shredded cooked chicken, cumin, chili powder, and shredded cheddar cheese. Stir gently until all the ingredients are evenly combined and well coated with the spices and cheese.
- Assemble the Quesadillas: Lightly brush one side of each tortilla with melted butter or oil. Place the buttered side down on a clean work surface. Evenly spoon the chicken and vegetable filling onto the tortillas, then cover with a second tortilla to form a sandwich.
- Cook the Quesadillas: Preheat the skillet over medium-high heat. Carefully transfer the assembled quesadillas into the skillet. Cook for 2–3 minutes on each side, pressing gently with a spatula, until the tortillas are golden brown and the cheese inside has melted.
- Rest and Slice: Remove the quesadillas from the skillet and place them on a cutting board. Let them rest for 2 minutes to set. Then, slice into bite-sized squares and serve immediately with sour cream and fresh cilantro as optional toppings.
Notes
- To add extra flavor, consider adding a pinch of smoked paprika or garlic powder to the filling mix.
- Use mild or spicy bell peppers depending on your preference for heat.
- For crispier quesadillas, brush the tortillas lightly with butter rather than oil.
- Ensure the skillet is hot enough before adding the quesadillas to get a nice golden crust.
- Cooling briefly before slicing helps prevent the cheese from oozing out.
