Ingredients
Meat Mixture
- 1 pound ground beef
- 24 ounce jar spaghetti sauce
- ¼ cup shredded mozzarella cheese
Cheese Mixture
- 8 ounces part skim ricotta cheese
- 1 egg
- ¼ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- 2 Tablespoons grated parmesan cheese
Additional Ingredients
- ½ cup shredded mozzarella cheese (divided: ¼ cup in meat mixture and ¼ cup for topping)
- 1 package wonton wrappers
Instructions
- Preheat Oven. Set your oven to 350 degrees Fahrenheit to prepare for baking the lasagna cups.
- Cook the Meat Mixture. Heat a skillet over medium-high heat and add the ground beef. Cook while crumbling the meat until it is no longer pink. Drain off any excess fat then return the meat to the skillet. Remove from heat.
- Mix in Sauce and Cheese. Stir the spaghetti sauce and ¼ cup of shredded mozzarella cheese into the cooked meat until well combined. Set this mixture aside.
- Prepare Cheese Mixture. In a medium bowl, combine the ricotta cheese, egg, garlic powder, Italian seasoning, and grated parmesan. Mix thoroughly until all ingredients are evenly incorporated.
- Assemble Wonton Cups. Grease a 12-cup muffin tin. Place two wonton wrappers in each muffin cup, overlapping slightly to form a sturdy cup shape.
- Layer the Filling. Spoon 2 tablespoons of the meat mixture into the bottom of each wonton cup. Follow with 1-2 tablespoons of the cheese mixture. Add another 2 tablespoons of the meat mixture on top, then finish with the remaining ¼ cup of shredded mozzarella cheese.
- Bake. Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the wonton wrappers are cooked through and the cheese has melted.
- Cool and Serve. Allow the lasagna cups to cool in the pan for 5-10 minutes before serving, as they will be very hot.
Notes
- You can substitute ground beef with Italian sausage for a different flavor.
- Adding frozen spinach (thawed and drained) to the cheese mixture is a great way to sneak in extra veggies.
- Lasagna cups can be made ahead and stored in the refrigerator or freezer; freeze individually wrapped for up to three months.
- These cups are delicious warm or at room temperature, making them perfect for lunches.
- Use a heated lunchbox to keep them warm if desired when packed for meals on the go.
