  • Total Time: 1 hour 40 minutes
  • Yield: 8 servings

Ingredients

Crust

  • 1 cup warm water (105°F to 115°F)
  • 1 teaspoon active dry yeast
  • 2 tablespoons granulated sugar
  • ⅓ cup (72 g) extra virgin olive oil
  • 1 teaspoon Italian seasoning
  • 2 teaspoons garlic, minced
  • 1 teaspoon kosher salt
  • 2 ½ cups (312.5 g) all-purpose flour

Sauce

  • ¾ cup (172.5 g) sour cream
  • ¼ cup (58 g) mayonnaise
  • 2 tablespoons whole milk
  • 1 teaspoon lemon juice
  • 1 teaspoon garlic, minced
  • ½ teaspoon dill weed
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper

Toppings

  • 25-30 dill pickle slices
  • 2 cups (226 g) shredded mozzarella cheese
  • Fresh dill, roughly chopped for garnish

Instructions

  1. Activate yeast mixture: In a large bowl, combine warm water, yeast, and granulated sugar. Stir gently and let the mixture rest for 5 minutes until it becomes foamy, indicating that the yeast is active.
  2. Prepare oil and seasoning mix: In a small bowl, mix extra virgin olive oil, Italian seasoning, minced garlic, and kosher salt. Pour half of this mixture into the yeast mixture and stir to combine. Set aside the remaining oil mixture for later.
  3. Make the dough: Gradually add the all-purpose flour to the combined liquids. Stir until a cohesive dough forms. Transfer the dough into a greased bowl, cover it with a cloth or plastic wrap, and let it rise in a warm place for about 1 hour, or until it doubles in size.
  4. Prepare the garlic-dill sauce: While the dough is rising, in a medium bowl, thoroughly combine sour cream, mayonnaise, whole milk, lemon juice, minced garlic, dill weed, kosher salt, and ground black pepper. Mix well and set aside.
  5. Preheat oven and prepare skillet: Once the dough has risen, preheat your oven to 450°F (232°C). Pour the reserved olive oil mixture into a 12-inch cast-iron skillet, using a pastry brush to evenly coat the bottom and up the sides of the skillet.
  6. Shape and dimple the dough: Transfer the risen dough into the oiled skillet. Press it out evenly to the edges, then use your fingers to create dimples across the surface of the dough to help hold toppings.
  7. Assemble the focaccia: Spread the prepared garlic sauce evenly over the dough’s surface. Arrange the dill pickle slices evenly over the sauce, then sprinkle the shredded mozzarella cheese generously on top of the pickles.
  8. Bake: Place the skillet in the preheated oven and bake for 22-25 minutes until the crust is golden brown and the cheese is bubbly and nicely browned.
  9. Garnish and serve: Remove the focaccia from the oven and garnish with roughly chopped fresh dill. Slice and serve warm for the best flavor and texture.

Notes

  • You can substitute the mayonnaise in the sauce with Greek yogurt for a lighter option.
  • If you don’t have a cast-iron skillet, a round ovenproof baking pan will work as well.
  • Check the focaccia towards the end of baking to avoid over-browning the cheese.
  • For extra flavor, try adding some red pepper flakes or chopped fresh chives on top before baking.
  • Allow the dough to rise in a warm, draft-free area for best results.
