Ingredients
Meat
- 1 lb ground beef 80/20
Seasonings
- 3 tbsp taco seasoning (DIY or sugar-free store bought)
- ½ teaspoon garlic salt (or salt + garlic powder)
- ¼ teaspoon ground black pepper
Dairy & Eggs
- ⅔ cup heavy whipping cream
- 4 large eggs
- 1 ¼ cup shredded cheddar cheese (shred your own)
Other
- ⅓ cup chunky salsa
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C), ensuring the oven rack is placed in the center position for even baking. Grease a 9-inch pie pan well, then set it aside.
- Cook Ground Beef: In a skillet over medium heat, brown the ground beef. Add a little oil if needed to prevent sticking. Cook until the beef is fully browned and no longer pink. Drain any excess grease from the skillet to keep the pie from becoming greasy.
- Season the Beef: Add the taco seasoning to the cooked beef in the skillet and stir well to combine, coating the meat evenly with the spices. Spoon this seasoned beef mixture into the prepared pie pan, spreading it out evenly.
- Prepare Egg Mixture: In a small bowl, whisk together the heavy whipping cream and eggs until smooth. Stir in the chunky salsa, 1 cup of shredded cheddar cheese, garlic salt, and ground black pepper, mixing thoroughly.
- Assemble the Pie: Pour the egg and salsa mixture evenly over the seasoned beef layer in the pie pan. Sprinkle the remaining ¼ cup of shredded cheddar cheese evenly over the top of the egg mixture.
- Bake the Pie: Place the pie pan in the preheated oven and bake uncovered for 35 to 40 minutes, or until the center is fully set and the top is golden brown. A knife inserted in the center should come out clean.
- Cool & Serve: Remove the pie from the oven and allow it to cool for about 5 minutes before slicing. Optionally, garnish with sour cream, additional salsa, fresh cilantro, chives, diced avocado, tomatoes, or olives as desired. Serve warm and enjoy your flavorful crustless keto taco pie!
Notes
- To lighten the dish, reduce the amount of cheddar cheese or substitute ground turkey or ground chicken for the beef.
- Grate cheddar cheese from a block rather than using pre-shredded cheese to avoid added carbs and potato starch.
- Doubling the recipe works well; just increase baking time by 8–10 minutes, though this has not been personally tested.
