Ingredients
Meat and Seasoning
- 1 lb. ground beef
- 1 pkg. taco seasoning
Fillings
- 1/2 cup refried beans
- 1 1/2 cups shredded cheddar or pepperjack cheese
Tortillas and Oil
- 8 corn tortillas
- 2 Tbsp. olive oil
Serving
- Sour cream (for serving)
- Salsa (for serving)
- Guacamole (for serving)
Instructions
- Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to ensure it reaches the perfect temperature for crisping the tortillas.
- Cook Ground Beef: In a medium skillet over medium heat, brown the ground beef until fully cooked, then drain any excess grease to keep the tacos from being too oily.
- Season Beef: Add the taco seasoning to the browned beef following the package directions, stirring to evenly coat the meat with spices for authentic taco flavor.
- Add Beans: Stir in the refried beans thoroughly with the seasoned beef in the skillet, combining the ingredients to make a flavorful taco filling. Remove the skillet from heat.
- Prepare Tortillas: Lay 6 to 8 corn tortillas on a large baking sheet and lightly brush both sides with olive oil. Be careful not to saturate the tortillas to avoid sogginess.
- Soften Tortillas: Place the oiled tortillas in the preheated oven for about 3 minutes until they become flexible for folding without cracking.
- Assemble Tacos: Place a portion of the beef and bean mixture on one half of each softened tortilla. Sprinkle generously with shredded cheese, then fold the other half of the tortilla over the filling to form a half-moon shape.
- Bake Tacos: Return the folded tacos to the oven and bake for 12 minutes. Then, carefully flip each taco over and bake for an additional 10 minutes until the tortillas are crispy and the cheese is melted.
- Serve: Remove the tacos from the oven and serve hot with your favorite toppings such as sour cream, salsa, and guacamole. Enjoy the crispy and cheesy homemade tacos!
Notes
- Use corn tortillas for authentic flavor and superior crispiness.
- Lightly oiling tortillas is key to getting a crispy finish without sogginess.
- Customize the cheese type to your preference, cheddar or pepperjack work best for melting and flavor.
- Keep an eye on the tacos during baking to avoid burning, especially on the second bake after flipping.
- Make sure to drain excess grease from the beef to keep the tacos crisp.
