These Crispy Jalapeno Popper Beef Taquitos combine spicy jalapenos, creamy cheese, and seasoned ground beef rolled in tender tortillas and pan-fried to golden perfection. A flavorful and crispy appetizer or main dish with a Tex-Mex twist, perfect for game day or casual gatherings.

  • Total Time: 35 minutes
  • Yield: 12 taquitos

Ingredients

Taquito Filling

  • 12 TortillaLand raw medium tortillas
  • 1 pound lean ground beef
  • 1/2 small onion, chopped
  • 2-4 jalapenos, seeded, deveined, diced
  • 3 garlic cloves, minced
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 8 oz. cream cheese, softened
  • 1/2 cup salsa (medium for more of a kick)
  • 2 cups freshly grated Pepper Jack cheese, divided
  • 1 teaspoon olive oil (optional for crisping)

Instructions

  1. Cook the Beef Mixture: Add the ground beef, diced jalapenos, and chopped onions to a large skillet over medium heat. Cook until the onions soften and the beef is completely cooked through. Add the minced garlic and sauté for an additional 30 seconds. Drain off any excess fat from the skillet to avoid greasiness.
  2. Add Spices and Cheeses: Stir in the chili powder, ground cumin, smoked paprika, salt, and dried oregano. Follow by adding the salsa and softened cream cheese. Reduce the heat to medium-low and cook, stirring frequently, until the cream cheese is fully melted and incorporated. Then, stir in 1 cup of the freshly grated Pepper Jack cheese until melted. Remove the skillet from heat.
  3. Assemble the Taquitos: Lay out each raw tortilla and place a heaping 1/4 cup of the beef and cheese filling near the bottom third of each tortilla. Top the filling with a heaping tablespoon of the remaining Pepper Jack cheese. Roll each tortilla up tightly to encase the filling.
  4. Pan-Fry the Taquitos: Heat 1 teaspoon of olive oil in a large nonstick skillet over medium heat for extra crispiness (optional). Working in batches, place the rolled taquitos seam side down in the skillet. Cook, rotating as needed, until the taquitos are golden brown and crispy on all sides, about 3-4 minutes per side.

Notes

  • You can adjust the number of jalapenos to your spice preference or substitute with milder peppers.
  • For a crispier texture, use olive oil when frying, but the taquitos can also be cooked without oil for a lighter version.
  • If preferred, you can bake the rolled taquitos at 400°F (200°C) for 15-20 minutes, turning halfway through, as an alternative cooking method.
  • Serve with extra salsa, sour cream, or guacamole for dipping.
