Ingredients
Egg Salad Mixture
- 6 hard-boiled eggs, chopped
- ½ cup shredded mozzarella cheese
- 2 tablespoons mayonnaise (optionally Kewpie mayonnaise)
- ½ tablespoon sriracha
- 2 teaspoons chives, finely chopped
- Kosher salt, to taste
- Freshly cracked black pepper, a few turns
For Cooking and Assembling
- Olive oil or avocado oil cooking spray
- 1 slice of bread, toasted
- ½ avocado, sliced or mashed
- Jalapeño slices, to taste
Instructions
- Mix the Egg Salad: Chop six hard-boiled eggs and transfer them to a mixing bowl. Add mayonnaise, sriracha, chopped chives, shredded mozzarella cheese, kosher salt, and freshly cracked black pepper. Stir thoroughly until all ingredients are evenly combined into a creamy mixture.
- Pan Fry the Egg Salad: Preheat a nonstick skillet over medium-high heat and lightly spray it with olive or avocado oil cooking spray to prevent sticking. Scoop a dollop of the egg mixture (about ¼ cup) onto the hot skillet, shaping it slightly. Cook for 1 to 2 minutes until the bottom is golden and crispy. Carefully flip the patty and sear the other side for an additional 1 minute. Avoid overcooking to prevent cheese from melting excessively and becoming difficult to handle.
- Assemble: Toast a slice of bread to your desired level of crispiness. Spread a layer of sliced or mashed avocado on top. Place the crispy egg salad patty over the avocado, then garnish with several fresh jalapeño slices for a pleasant spicy kick. Serve immediately while warm to enjoy the perfect texture and flavors.
Notes
- Using Kewpie mayonnaise adds a slightly richer and tangier flavor if desired.
- Adjust the amount of sriracha based on your preferred spice level or omit for a milder taste.
- Make sure the skillet is adequately preheated for proper crisping.
- Serve immediately for best texture; leftover crispy egg patties may lose their crispiness.
- Substitute mozzarella with other mild melting cheeses like Monterey Jack or cheddar if preferred.
- For a gluten-free option, use gluten-free bread.
