Ingredients
Salad
- 1 (15oz) can chickpeas, rinsed and patted dry
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 1 English cucumber, quartered lengthwise and cut into 1/2-inch pieces
- 8 ounces cherry tomatoes, quartered
- 2 ounces (about 1/2 cup) feta cheese, cubed
- 1/4 cup fresh parsley, chopped (added for freshness, based on instructions)
Dressing
- 1 tablespoon olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon honey
- 1/2 teaspoon Dijon mustard
- 1/2 teaspoon minced dried thyme
- 1/4 teaspoon salt
- Pinch of black pepper
Instructions
- Dry the Chickpeas: Line a large plate with a double layer of paper towels. Spread the rinsed and patted dry chickpeas evenly on the plate. Microwave for 5-7 minutes until the chickpeas are dry to help them crisp up in the skillet.
- Sauté the Chickpeas: Heat 1 tablespoon of olive oil in a large non-stick skillet over medium-high heat until shimmering. Add the dried chickpeas and cook, stirring occasionally, until golden brown and crispy, about 6-8 minutes.
- Season Chickpeas: Once crispy, transfer the chickpeas to a bowl and toss with smoked paprika, salt, and pepper to evenly coat.
- Prepare the Dressing: In a small jar or bowl, whisk together olive oil, red wine vinegar, honey, Dijon mustard, dried thyme, salt, and black pepper until well combined.
- Assemble the Salad: In a large bowl, combine the cucumber pieces, quartered cherry tomatoes, cubed feta cheese, chopped parsley, and crispy chickpeas.
- Toss with Dressing: Drizzle about three-quarters of the vinaigrette over the salad and toss gently to coat all ingredients evenly. Taste and season with additional salt and pepper if needed.
- Serve: Add the remaining dressing if desired before serving. Enjoy immediately for the best texture and flavor.
Notes
- Pat chickpeas very dry before microwaving to achieve maximum crispiness.
- If preferred, chickpeas can be roasted in the oven at 400°F for 20-25 minutes instead of microwaving and sautéing.
- Fresh parsley adds a nice bright flavor, but you can substitute with cilantro or basil.
- Honey can be omitted for a vegan version or substituted with maple syrup.
- Serve this salad immediately to maintain the crisp texture of the chickpeas.
