Ingredients
For the crust:
- 4 tbsp unsalted butter, melted
- 24 squares graham crackers
- ¼ cup sugar
For the lemon filling:
- 2 egg yolks
- 1 can (12oz) sweetened condensed milk
- ½ cup lemon juice (freshly squeezed preferred)
Instructions
- Preheat and prepare pan: Preheat the oven to 350°F (175°C). Butter and line an 8-inch square baking pan with parchment paper, leaving some overhang on two sides to help remove the lemon squares later.
- Make the crust base: Break the graham crackers into pieces and pulse them in a food processor until finely crumbled. Add the sugar and melted butter, then pulse again until all ingredients are evenly combined into a crumbly mixture.
- Form the crust: Transfer the graham cracker mixture into the prepared pan. Press firmly into the bottom and up about 1 inch on the sides to create an even crust layer.
- Bake the crust: Place the crust in the oven and bake for 10-12 minutes or until it turns lightly golden and fragrant. Remove and let the crust cool completely in the pan.
- Prepare the filling: While the crust cools, whisk together the sweetened condensed milk and egg yolks in a bowl until smooth. Gradually add lemon juice, whisking continuously until well combined for a creamy filling.
- Assemble and bake: Pour the lemon filling evenly over the cooled crust. Return the pan to the oven and bake for 15-20 minutes, or until the filling is set and the crust is nicely browned on the edges.
- Cool and chill: Remove from oven and allow the lemon squares to cool completely in the pan on a wire rack. For firmer texture, refrigerate after it has cooled to room temperature.
- Cut and serve: Use the parchment paper overhang to lift the lemon squares from the pan. Place on a cutting board and slice into 16 mini squares or 9 larger squares as desired. Serve chilled or at room temperature.
Notes
- Using fresh lemon juice enhances the brightness and flavor of the filling.
- Refrigerating after cooling helps the filling firm up for cleaner slicing.
- Graham crackers can be substituted with digestive biscuits if preferred.
- Ensure the crust is completely cooled before adding filling to prevent sogginess.
- Use an electric mixer or whisk to create a smooth filling consistency.
