Ingredients
Chicken
- 4 boneless, skinless chicken thighs
- ½ cup all-purpose flour (or gluten-free flour, if needed)
- 1 ½ cups thin potato chips, crushed
- 2 large eggs, beaten
- 4 tablespoons butter
- 4 rolls (pretzel, ciabatta, or your choice of bread)
Cowboy Butter Sauce
- 1 tablespoon lemon juice
- 1 tablespoon grainy Dijon mustard
- 2 tablespoons mayonnaise
- 1 teaspoon Worcestershire sauce
- 2 tablespoons butter, very soft but not melted
- ½ tablespoon garlic paste
- 1 teaspoon smoked paprika
- ½ teaspoon red pepper flakes
- ¼ teaspoon black pepper
- ¼ teaspoon chipotle pepper
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon shallot, finely minced
Optional Toppings
- 8 tomato slices
- 8 leaves butter lettuce
- Mayonnaise or Dijon mustard, for spreading
- Pepper Jack cheese
Instructions
- Prepare dredging station: Place the flour, beaten eggs, and crushed potato chips each into separate shallow plates or bowls. Dredge each chicken thigh first in the flour, shaking off excess, then dip into the beaten egg, and finally coat thoroughly with the crushed potato chips for a crispy crust.
- Cook chicken: Preheat your air fryer to 380°F. Place the coated chicken thighs in the air fryer basket in a single layer. Air fry for 15-18 minutes, flipping halfway through, until the internal temperature reaches 165°F. Adjust cook time if your thighs are thicker.
- Make the cowboy butter sauce: In a bowl, whisk together lemon juice, grainy Dijon mustard, mayonnaise, Worcestershire sauce, very soft butter, garlic paste, smoked paprika, red pepper flakes, black pepper, chipotle pepper, chopped fresh thyme, parsley, and finely minced shallot until fully combined. Set aside.
- Coat chicken: While the chicken is still hot, generously coat both sides with the cowboy butter sauce. Alternatively, you can warm the sauce slightly and pour it over the chicken to enhance flavor and moisture.
- Toast buns: Melt 1 tablespoon butter in a skillet over medium heat. Place the cut sides of the rolls down in the skillet and toast until golden brown and slightly crisp.
- Assemble sandwiches: Spread mayonnaise or Dijon mustard on the toasted buns if desired. Layer with the cowboy butter coated chicken thighs, butter lettuce leaves, tomato slices, and optional Pepper Jack cheese. Top with the bun and serve immediately to enjoy the full flavor and crunch.
Notes
- Storage: Store leftover chicken in an airtight container in the refrigerator for up to 3 days. Keep cowboy butter sauce in a covered container in the fridge for up to 4 days; bring to room temperature before using.
- Reheating: Air fryer at 350°F for 3-4 minutes until warm; oven at 350°F for 8-10 minutes; skillet over medium heat for 3-4 minutes per side; microwave for 45-60 seconds (note: microwave may reduce crispiness).
- Freezing: Freeze cooked chicken thighs on a baking sheet until solid, then transfer to a freezer bag and store for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Tips for best results: Trim fat from chicken thighs to make the sandwich leaner. Double the cowboy butter sauce if planning to make extra sandwiches. Use pretzel buns, ciabatta, or soft rolls for best texture. To reduce spice, omit red pepper flakes and chipotle.
- Alternate cooking methods: Oven bake at 400°F for 20-25 minutes, flipping halfway until internal temp is 165°F; pan fry over medium heat in 2-3 tablespoons oil for 5-6 minutes per side; grill over medium-high heat for 6-7 minutes per side, brushing with butter sauce near the end.
- Leftovers: Use leftover chicken in wraps or atop salads, or serve with extra cowboy butter as a dipping sauce. It also makes a great filling for quesadillas or tacos.
