This Cottage Cheese Egg Salad is a high-protein, mayo-free twist on the classic egg salad. Featuring hard-boiled eggs combined with creamy cottage cheese, Dijon mustard, and fresh herbs, this recipe delivers a flavorful, creamy texture without the heaviness of mayonnaise. Perfect for a healthy lunch or snack, it stays light while providing plenty of nutrients and can be easily customized to taste.

  • Total Time: 22 minutes
  • Yield: 4 servings

Ingredients

Eggs

  • 4 large eggs

Salad Mix

  • ¼ cup red onion, diced small
  • ¼ cup cottage cheese
  • 2 teaspoon Dijon mustard
  • 2 teaspoon lemon juice, freshly squeezed
  • 1 tablespoon parsley leaves, chopped
  • 1 tablespoon chives, chopped
  • ½ teaspoon salt
  • ¼ teaspoon black pepper, ground

Instructions

  1. Boil the eggs: Bring water to a boil in a pot, then gently add the four eggs. Set a timer for 12 minutes. After boiling, immediately transfer eggs to a bowl of icy cold water to stop the cooking process and cool them down.
  2. Prepare the aromatics and herbs: While the eggs are boiling and cooling, dice the red onion finely and chop the parsley and chives.
  3. Peel and separate eggs: Peel the cooled eggs and cut each in half lengthwise. Carefully remove the yolks from two of the eggs and set aside.
  4. Chop eggs: Chop the two whole eggs and two egg whites finely and place them in a medium mixing bowl.
  5. Prepare the creamy mixture: In a mini food processor, combine the cottage cheese, Dijon mustard, lemon juice, and the two reserved egg yolks. Process until smooth, stopping occasionally to scrape down the sides if necessary.
  6. Combine all ingredients: Add the creamy mixture to the bowl with chopped eggs. Add the diced onion, chopped parsley, chives, salt, and black pepper. Mix gently with a spoon or rubber spatula until everything is fully combined.
  7. Taste and adjust seasoning: Sample the egg salad and add more salt or pepper if needed according to your preference.
  8. Serve or store: Serve the egg salad immediately or store it in an airtight container in the refrigerator until ready to eat.

Notes

  • If you prefer creamier, gummier egg yolks, boil eggs for 8-10 minutes instead of 12.
  • Any brand of cottage cheese works, though Good Culture is recommended for taste.
  • Adjust egg chopping size to suit your preference; smaller dice works best for sandwiches.
  • Balance lemon juice, mustard, and onion amounts based on your flavor preference; 2 teaspoons each creates a nice harmony with the cottage cheese.
