Delight in these soft and flavorful Coffee Cinnamon Rolls topped with a rich coffee-infused icing. Classic cinnamon rolls get a caffeinated twist with instant coffee powder in both the filling and the creamy icing, complemented by crunchy pecans for extra texture. Perfect for breakfast or brunch, these rolls combine the warm spices of cinnamon with the bold taste of coffee.

  • Total Time: 1 hour 50 minutes
  • Yield: 12 cinnamon rolls

Ingredients

For the Cinnamon Rolls

  • 57 g unsalted butter (¼ cup / 2oz)
  • 1 cup cold milk (250ml)
  • 455 g plain flour (all-purpose flour) (3 ½ cups / 1lb)
  • 2 ¼ teaspoons instant dry yeast (1 sachet / 7g)
  • ⅓ cup white granulated sugar (66g / ~2¼oz)
  • ½ teaspoon salt
  • 1 large egg

For the Filling

  • ½ cup packed brown sugar (100g / 3 ½oz)
  • 3 teaspoons cinnamon
  • 2 teaspoons instant coffee powder
  • ½ cup pecans, roughly chopped (60g / ~2oz)
  • 57 g unsalted butter, melted (¼ cup / 2oz)

Topping

  • 1 egg yolk
  • 1 teaspoon water
  • 2 teaspoons maple syrup

For the Icing

  • ¼ cup thickened cream (heavy cream) (60ml)
  • 6 teaspoons finely ground instant coffee
  • 2 ½ cups icing sugar (powdered sugar) (325g / ~11 ½oz)

Instructions

  1. Making the Dough: In a small saucepan over low heat, melt together the butter and about one third of the milk without overheating. Add the remaining cold milk and set aside. In the stand mixer’s bowl, combine the flour, yeast, sugar, and salt. Pour in the warm milk mixture and stir briefly, then add the egg. Attach the dough hook and mix for 6-7 minutes until the dough is smooth and elastic. Lightly oil a clean bowl, place the dough inside, turn to coat with oil, cover with plastic wrap, and let it rise in a warm place for 1 hour or until doubled in size.
  2. Assembling the Cinnamon Rolls: Roll the dough on a lightly floured surface into a large rectangle about 5-6mm thick. Preheat the oven to 200°C (180°C fan forced) / 375°F and grease a 9×13 inch baking tray. Mix brown sugar, cinnamon, 2 tsp instant coffee powder, and most pecans in a small bowl. Brush melted butter over the dough, then evenly sprinkle the filling mixture on top. Roll the dough tightly from one long side to the other into a log and cut into 12 equal pieces. Place the rolls spaced out in the baking tray, cover loosely, and let rise for 15 minutes.
  3. Baking: Beat the egg yolk with water and brush over the dough surfaces of the rolls. Mix the remaining pecan pieces with maple syrup and dot over the tops. Bake for 22-25 minutes, rotating the tray halfway through, until deep golden brown. Let cool before icing.
  4. Preparing the Icing: Heat the thickened cream and instant coffee in a microwave-safe bowl for 20-30 seconds until warm. Stir to dissolve the coffee. Sift in the icing sugar and mix well, adjusting thickness by adding more sugar or cream as preferred. Spoon or pipe the icing over the cooled cinnamon rolls.

Notes

  • I use a standard Australian 20ml tablespoon, equal to 4 teaspoons worldwide.
  • All ovens vary; check for doneness 3-5 minutes before the recipe’s suggested baking time.
  • For best results, weigh ingredients where weights are provided.
  • You can prepare dough by hand if you don’t have a stand mixer, kneading for about 10 minutes until smooth.
  • Let rolls cool completely before adding icing to prevent melting and sliding off.
