Ingredients
Chicken
- 4 boneless skinless chicken breasts
Marinade
- ½ cup olive oil
- 2 tablespoons dijon mustard
- Juice of 1 lime
- Juice of 1 lemon
- Juice of 2 oranges
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning or Herbs de Provence
- 1 teaspoon fresh thyme, finely chopped (or ¼ teaspoon dried)
- 1 teaspoon fresh oregano, finely chopped (or ¼ teaspoon dried)
- ¼ teaspoon crushed red pepper flakes
Instructions
- Prepare Marinade: Combine all marinade ingredients in a bowl and whisk vigorously or place in a jar, cover, and shake well to mix thoroughly. Reserve ¼ cup of this marinade to brush on the chicken during grilling.
- Marinate Chicken: Place the chicken breasts in a bowl or a large zip-close bag, pour in the marinade (excluding the reserved ¼ cup), and toss or shake to coat the chicken evenly. Refrigerate for at least 1 hour, or up to overnight to enhance flavor.
- Preheat Grill: Heat the grill to medium temperature and oil the grates to prevent sticking.
- Grill Chicken – First Side: Using tongs or a fork, place the chicken on the grill. Cook for 5 to 7 minutes without moving to develop grill marks.
- Grill Chicken – Turn and Brush: Flip the chicken over, then brush half of the reserved marinade over the tops of all pieces. Cook another 5 to 7 minutes.
- Continue Grilling and Basting: Turn the chicken again, brush with the remaining reserved marinade, and cook for an additional 2 to 4 minutes, or until the chicken is cooked through and juices run clear.
- Serve: Remove the chicken from the grill and serve immediately. Garnish with fresh herbs and citrus wedges (lemon, lime, or orange) for squeezing over the top. Enjoy your fresh and flavorful grilled chicken!
Notes
- For a homemade herb blend, mix ¼ teaspoon each of dried thyme, parsley, oregano, and basil. Make extra to have ready for future recipes.
- Marinate chicken for a minimum of 30 minutes, but 1 hour is recommended for better flavor, with up to 12 hours for maximum intensity.
- If you lack variety in citrus fruits, you can substitute using only lemon or lime juice and orange juice alternatively.
- For an extra kick of flavor, try doubling the garlic powder and crushed red pepper flakes in the marinade.
- Herbs de Provence is a great pantry staple that can substitute for Italian seasoning, adding a distinct aromatic flavor to this and other recipes.
