4.3 from 58 reviews

This chipotle vinaigrette recipe is a bold, smoky-sweet dressing inspired by Chipotle’s famous honey vinaigrette. Combining chipotle peppers in adobo, honey, lime juice, and aromatic spices, it comes together in just 5 minutes. Perfect for salads, burrito bowls, roasted vegetables, or as a flavorful marinade, this versatile vinaigrette adds a punch of smoky heat and subtle sweetness to any dish.

  • Total Time: 5 minutes
  • Yield: About 3/4 cup vinaigrette (serves 6-8 people)

Ingredients

Vinaigrette Ingredients

  • 2/3 cup olive oil (or substitute avocado oil, vegetable oil, canola oil, or rice bran oil)
  • 3 tablespoons red wine vinegar
  • 3 tablespoons honey
  • 1 chipotle pepper in adobo + 1 teaspoon of adobo sauce (adjust to taste)
  • 2 cloves garlic
  • 2 tablespoons lime juice (approx. 1 lime)
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine Ingredients: Add olive oil, red wine vinegar, honey, chipotle pepper in adobo with the adobo sauce, garlic cloves, lime juice, oregano, cumin, kosher salt, and black pepper to a high-speed blender or food processor.
  2. Blend Thoroughly: Blend on high for 1-2 minutes until all ingredients are thoroughly combined and the chipotle pepper is finely broken down, ensuring a smooth and well-emulsified vinaigrette. Alternatively, mince the garlic finely and shake all ingredients vigorously in a lidded jar until combined.
  3. Adjust Seasoning: Taste the vinaigrette and adjust spices if desired. Add an additional chipotle pepper in adobo to increase smokiness and heat, then blend again if needed.
  4. Serve or Store: Pour over your favorite salads, drizzle on burrito bowls or roasted vegetables, or use as a marinade. Store leftovers in a sealed mason jar or airtight container in the refrigerator for up to 1 week.

Notes

  • Oil Choice: Chipotle’s original recipe uses rice bran oil, but olive oil and avocado oil provide extra flavor and nutritional benefits. Other neutral oils like canola or vegetable oil also work.
  • Chipotle in Adobo Storage: Use leftover chipotle peppers in adobo in recipes such as sheet pan shrimp fajitas, white bean vegetarian chili, Instant Pot chicken tinga, or spicy chipotle chicken pasta. They can also be flash frozen on a sheet pan and stored in a freezer-safe container for up to 6 months.
  • Spice Level: Adjust chipotle peppers to your preferred heat level. Start with one and add more to increase smokiness and spice.
