Ingredients
Fish and Marinade
- 1.5 lbs cod, cut into fillets
- 1/4 cup avocado oil
- 1 tsp lime zest
- 2 Tbsp lime juice
- 1 large clove garlic, minced
- 1 1/2 tsp chili powder
- 1 tsp ground paprika
- 1 1/2 tsp dried oregano
- 1/4 tsp black pepper
- 1/2 tsp sea salt
Instructions
- Prepare the Marinade: In a measuring cup or mixing bowl, stir together avocado oil, lime zest, lime juice, minced garlic, chili powder, ground paprika, dried oregano, black pepper, and sea salt until well combined.
- Marinate the Cod: Place the cod fillets in a sealable container or zip lock bag. Pour in the marinade, seal the bag or container, and gently move it around to ensure the fish is well coated. Refrigerate for at least 30 minutes and up to 10 hours for best flavor penetration.
- Preheat the Oven: When ready to bake, preheat the oven to 400 degrees Fahrenheit (204 degrees Celsius) and position the oven rack second closest to the top.
- Bake the Cod: Transfer the marinated cod fillets along with the marinade into a large casserole dish. Place the dish on the prepared oven rack and bake for 10-15 minutes, or until the fish reaches an internal temperature of 145 degrees Fahrenheit (63 degrees Celsius) and is opaque and flakes easily with a fork.
- Serve: Remove from the oven and serve immediately. Pair with roasted asparagus and cauliflower rice for a low-carb meal, or enjoy with Lemon Garlic Rosemary Rice for a more substantial side.
Notes
- Omit the garlic to make the recipe low-FODMAP.
- Ensure not to overcook the fish to maintain moisture and flakiness.
- Marinating longer enhances the flavor but do not exceed 10 hours to avoid the acid from the lime juice breaking down the fish texture excessively.
- Use a digital thermometer for accurate doneness measurement.
