Enjoy a quick and flavorful Chicken Shawarma Kebab featuring tender chicken thighs marinated in warm spices and creamy Greek yogurt. This easy-to-make recipe offers aromatic, juicy kebabs perfect for grilling, ideal for a summer barbecue or a delicious meal any time.

  • Total Time: 32 minutes
  • Yield: 8 servings

Ingredients

Marinade & Main Ingredients

  • 200 g plain Greek yogurt
  • 2 tsp ground cumin
  • 2 tsp ground cardamom
  • 2 tsp turmeric
  • 2 tsp ground cinnamon
  • 2 tsp salt
  • 1.5 kg chicken thighs, cut into 3 cm pieces
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Marinade: In a large mixing bowl, combine the Greek yogurt, ground cumin, ground cardamom, turmeric, ground cinnamon, and salt until well mixed. This yogurt-based marinade enhances flavor and tenderness.
  2. Marinate the Chicken: Add the chicken thigh pieces to the marinade, tossing them thoroughly to coat each piece evenly. For best results, marinate at room temperature for 15 minutes or refrigerate for up to 2 hours to allow the spices to infuse.
  3. Preheat the Grill: Heat your grill to medium-high temperature. If cooking indoors, use a cast-iron grill pan to replicate grill marks and sear the meat properly.
  4. Skewer the Chicken: Thread the marinated chicken pieces onto 8 metal or soaked bamboo skewers, spacing them evenly to ensure uniform cooking. Metal skewers are preferred for even heat distribution and durability.
  5. Grill the Kebabs: Place the skewers on the grill and cook for 10-12 minutes, turning every 3-4 minutes. Grill until the chicken is lightly charred and completely cooked through, ensuring juicy and flavorful kebabs.
  6. Garnish and Serve: Once grilled, sprinkle the kebabs with freshly chopped parsley as a refreshing garnish and serve hot for an aromatic and satisfying meal.

Notes

  • Marinating for longer than 2 hours is possible but may change the texture of the chicken.
  • Use metal skewers for durability and even cooking; if using wooden or bamboo skewers, soak them in water for at least 30 minutes to prevent burning.
  • If a grill is unavailable, a cast iron grill pan on the stovetop works well to achieve similar results.
  • Serve with pita bread, fresh salad, or rice for a complete meal.
  • Adjust salt according to personal preference or dietary needs.
