A delicious and easy-to-make Chicken Nachos recipe featuring layers of shredded rotisserie chicken, salsa, creamy cheddar cheese sauce, and crispy corn tortilla chips baked to perfection. Perfect for game day, parties, or a flavorful snack, topped with your favorite fresh toppings.

  • Total Time: 20 minutes
  • Yield: 4 to 6 servings

Ingredients

Chicken Mixture

  • 2 cups rotisserie chicken, shredded
  • 1/2 cup salsa

Cheese Sauce

  • 1 cup half and half (can substitute with half milk and half cream)
  • 1 teaspoon cornstarch
  • 2 cups freshly grated medium cheddar cheese
  • 1 teaspoon hot sauce (optional, more to taste)
  • Salt to taste

Nachos Assembly

  • 8 cups corn tortilla chips
  • 1 cup shredded cheddar cheese or Mexican blend cheese

Optional Toppings

  • Sour cream
  • Guacamole
  • Pico de gallo
  • Jalapenos
  • Black beans
  • Refried beans
  • Fresh cilantro
  • Black olives
  • Taco sauce
  • Hot sauce

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a large baking sheet with aluminum foil or parchment paper. This will ensure easy cleanup and prevent the nachos from sticking.
  2. Mix Chicken and Salsa: In a medium bowl, combine the shredded rotisserie chicken with 1/2 cup salsa. Stir well to evenly coat the chicken. Set aside for layering.
  3. Make Cheese Sauce: In a small pot, whisk together the half and half and cornstarch until smooth. Heat over medium-high until hot but not boiling, then reduce the heat to low. Stir in the freshly grated cheddar cheese and hot sauce (if using), stirring constantly until the cheese melts into a smooth sauce. Add salt to taste.
  4. Layer Nachos: On the prepared baking sheet, arrange half of the corn tortilla chips in an even, single layer. Spread half of the chicken and salsa mixture evenly over the chips. Drizzle half of the cheese sauce over the chicken layer, then sprinkle with 1/2 cup of shredded cheddar or Mexican blend cheese. Repeat with the remaining chips, chicken mixture, cheese sauce, and shredded cheese to form a second layer.
  5. Bake the Nachos: Place the assembled nachos in the preheated oven and bake for 8-10 minutes or until the cheese on top has melted and everything is heated through.
  6. Add Toppings and Serve: Remove the nachos from the oven and immediately top with your preferred toppings such as sour cream, guacamole, pico de gallo, jalapenos, black beans, refried beans, fresh cilantro, black olives, taco sauce, or hot sauce. Serve hot and enjoy!

Notes

  • Use freshly grated cheese for the best melting texture and flavor.
  • You can customize toppings to your liking or what you have available.
  • If you prefer a spicier nacho, increase the amount of hot sauce in the cheese sauce or add jalapenos.
  • Leftover nachos can be reheated in the oven for best results, avoid microwaving to keep chips crispy.
  • For a lighter option, substitute half and half with milk in the cheese sauce.
