Ingredients
Dip Base
- 6 ounces reduced-fat cream cheese, room temperature
- 1 cup plain full fat Greek yogurt, room temperature
- 1 cup green enchilada sauce
- 2 (4-ounce) cans diced green chiles
- 1 teaspoon ground cumin
- 1 teaspoon chili powder or green chile powder (if available)
- 1/2 teaspoon kosher salt, or to taste
Protein
- 2 cups shredded cooked chicken
Cheese Toppings
- 1/2 cup shredded part skim mozzarella cheese
- 1/2 cup shredded Monterey Jack, Colby Jack, or cheddar cheese
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Lightly spray an 8-inch cast iron skillet or a 1 1/2 to 2-quart casserole dish with cooking spray to prevent sticking.
- Mix Dip Ingredients: In a large bowl, whisk together the reduced-fat cream cheese, plain Greek yogurt, green enchilada sauce, diced green chiles, ground cumin, chili powder, and kosher salt until smooth and well combined.
- Fold in Chicken and Cheese: Gently fold the shredded cooked chicken and half of the shredded cheeses into the cream cheese mixture, ensuring everything is evenly incorporated.
- Assemble Dip: Pour the mixture into the prepared baking dish and spread it out evenly. Sprinkle the remaining cheese evenly over the top of the dip.
- Bake Until Bubbly: Place the dish in the preheated oven and bake for 20 to 25 minutes, or until the dip is hot and bubbly and the cheese on top has melted and started to brown slightly.
- Garnish and Serve: Remove the dip from the oven and garnish with fresh cilantro if desired. Serve warm with tortilla chips or sliced vegetables for dipping.
Notes
- Use reduced-fat cream cheese and part-skim mozzarella to keep the dip lighter.
- Greek yogurt adds creaminess and protein while reducing fat compared to sour cream.
- Adjust the amount of chili powder or green chile powder to your heat preference.
- For a spicier dip, add chopped jalapeños or hot sauce.
- Leftovers can be refrigerated for up to 3 days and reheated gently in the oven or microwave.
