  • Total Time: 2 hours 35 minutes
  • Yield: 4 servings

Ingredients

For the chicken

  • 2 tablespoons olive oil
  • 3 tablespoons lime juice
  • 3 chipotle chilis in adobo sauce, finely chopped
  • 1 ½ tablespoons adobo sauce
  • 1 ½ teaspoons garlic powder
  • ¾ teaspoon salt
  • 1 ½ pounds chicken breast, cut into strips

For the cilantro lime rice

  • 1 cup long-grain white rice, rinsed
  • 1 ½ cups water
  • ¼ teaspoon salt, plus more to taste
  • 1 lime, zested
  • 2 tablespoons fresh lime juice
  • ¼ cup chopped cilantro

To assemble

  • 1 head romaine lettuce, chopped
  • 1 cup tomatoes, diced
  • 1 avocado, chopped
  • 1 cup frozen corn, thawed
  • 1 (15-ounce) can black beans, rinsed and drained
  • ½ small red onion, chopped

Instructions

  1. Marinate the chicken: In a large bowl, stir together olive oil, lime juice, chopped chipotle chilis, adobo sauce, garlic powder, and salt. Add the chicken strips and toss well to coat. Cover and refrigerate for at least 2 hours or up to overnight to let the flavors develop.
  2. Cook the chicken: Heat a large pan over medium-high heat. Remove the chicken from the marinade and add the strips to the pan. Cook, stirring occasionally, until the chicken is cooked through and nicely browned, about 5 minutes. Remove from heat and set aside.
  3. Prepare the cilantro lime rice: Bring a pot of water to a boil and add salt and the rinsed rice. Return to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes, or until the water is fully absorbed and the rice is tender. Remove the lid, fluff the rice with a fork, and stir in lime zest, lime juice, chopped cilantro, and additional salt to taste.
  4. Assemble the burrito bowls: In serving bowls, layer a bed of cilantro lime rice and chopped romaine lettuce. Top each bowl evenly with the cooked chipotle chicken, diced tomatoes, chopped avocado, thawed corn, rinsed black beans, and chopped red onion for a fresh, colorful finish.

Notes

  • Marinating the chicken overnight enhances the depth of flavor and tenderness.
  • Feel free to add extra toppings like shredded cheese, sour cream, or salsa if desired.
  • The rice can be prepared ahead of time and reheated to save time.
  • Use fresh lime juice for the best citrus flavor.
  • For a spicier bowl, add additional chipotle chilis or some cayenne pepper to the marinade.
