Ingredients
Chicken
- 2-3 chicken breasts (about 3 cups of cooked, shredded chicken)
- 2 Tablespoons oil (avocado or olive oil)
- Salt and pepper to taste
- 2 quarts chicken broth
Dumplings
- 2 cups all-purpose flour
- ½ teaspoon baking powder
- 2 Tablespoons cold salted butter, cubed
- 1 cup milk
- All-purpose flour for dusting the counter and rolling out dumplings
Instructions
- Preheat and prepare chicken: Preheat your oven to 350°F (175°C). Spray a baking sheet with nonstick cooking spray. Place the chicken breasts on the baking sheet, drizzle with oil, and season with salt and pepper.
- Bake chicken: Bake the chicken breasts for approximately 45 minutes until they reach an internal temperature of 165°F (74°C). Remove from oven and shred the chicken using two forks.
- Warm broth: Pour the chicken broth into a large pot and begin warming it on the stovetop while preparing the dumplings.
- Make dumpling dough: In a medium bowl, combine 2 cups all-purpose flour with baking powder. Add cold cubed salted butter and use your fingers, fork, or pastry cutter to blend until the mixture resembles tiny pebbles.
- Add milk: Pour in 1 cup of milk and mix until a dough forms.
- Roll out dough: Dust your counter generously with all-purpose flour. Place the dumpling dough on it and dust the top with more flour. Roll the dough out to about 1/4-inch thickness, adding more flour as needed to prevent sticking.
- Cut dumplings: Use a knife or pizza cutter to cut the dough into square dumplings. Dust the dumplings lightly with flour to keep them from sticking and to help thicken the broth later.
- Boil broth with chicken: Bring the chicken broth to a boil on the stovetop. Add the shredded chicken and stir to combine.
- Add dumplings: Add dumplings one at a time to the boiling broth to prevent them from sticking together. Stir frequently while adding.
- Cook dumplings: Let the dumplings cook for 15-20 minutes. The broth will thicken due to the flour on the dumplings, and the dumplings may sink as they absorb the broth.
- Serve: Taste a dumpling to ensure it is cooked through with no doughy taste. Serve the chicken and dumplings hot and enjoy!
Notes
- You can use either avocado or olive oil for baking the chicken depending on preference.
- Be generous with flour when rolling out and cutting dumplings to avoid sticking.
- Cook dumplings until fully set and no longer doughy inside, about 15-20 minutes.
- Shredding the chicken finely helps it distribute evenly in the broth.
- This recipe yields a hearty meal suitable for a cozy family dinner.
