Ingredients
Roux
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
Vegetables and Seasoning
- 1 small yellow onion, chopped
- 1 medium green bell pepper, rinsed, seeded, and chopped
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme leaves)
- 1 dried bay leaf
- 1 medium tomato, chopped
- 1 tablespoon Cajun seasoning (store-bought or homemade)
- 2 teaspoons Worcestershire sauce
Liquids
- 1-2 cups unsalted chicken stock (or shrimp or seafood stock)
Protein
- 1 pound crawfish tail meat
For Serving and Garnish
- Cooked white rice
- Chopped green onions
- Fresh chopped parsley
- Salt, to taste
- Cracked black pepper, to taste
Instructions
- Prepare the Roux: In a medium, heavy-bottom skillet or Dutch oven, melt 4 tablespoons of unsalted butter over medium heat. Add 4 tablespoons of all-purpose flour and cook, stirring constantly with a wooden spoon or silicone whisk, for 8 to 10 minutes until the mixture is a light peanut butter color and emits a nutty aroma. Be vigilant to prevent burning the roux.
- Sauté Vegetables: Add the chopped onion, green bell pepper, and celery to the roux. Cook for 7 to 8 minutes, stirring occasionally, until the vegetables soften. Add minced garlic and cook for an additional 1 minute until fragrant.
- Add Seasonings and Simmer: Stir in fresh thyme leaves, dried bay leaf, chopped tomato, Cajun seasoning, and Worcestershire sauce. Cook while stirring for 2 to 3 minutes to release the aromas. Gradually pour in 1 cup of chicken stock while stirring, bring to a boil, then reduce to a simmer. Let the sauce simmer for 20 to 25 minutes, adding more stock as needed to achieve a thick gravy-like consistency. Season with salt and cracked black pepper to taste.
- Incorporate Crawfish: Stir in 1 pound of crawfish tail meat. Continue to simmer for 3 to 5 minutes until the crawfish is heated through.
- Serve: Remove from heat and let the etouffee cool for about 10 minutes. Serve over buttered cooked white rice and garnish with chopped green onions and fresh parsley.
Notes
- Keep a close eye on the roux; it can burn quickly if left unattended.
- If desired, substitute chicken stock with shrimp or seafood stock for a more intense flavor.
- Cajun seasoning can be store-bought or homemade depending on preference.
- The consistency should be like a thick gravy—add stock gradually to control thickness.
- Allowing the etouffee to cool briefly improves flavor melding and texture before serving.
