Butter Swim Biscuits are rich, buttery biscuits baked directly in melted butter, resulting in a golden crust and a moist, tender crumb that soaks up the flavorful butter during baking. These biscuits are quick to prepare and perfect for serving warm as a buttery, comforting accompaniment to any meal.

  • Total Time: 35 minutes
  • Yield: 9 biscuits

Ingredients

Wet Ingredients

  • 1 ¾ cups low-fat or whole liquid buttermilk, at room temperature
  • ½ cup (8 tbsp) unsalted butter, cut into 1-inch cubes

Dry Ingredients

  • 2½ cups (300 g) all-purpose flour
  • 4 tsp (16 g) baking powder
  • 1 tbsp (12 g) granulated sugar
  • 2 tsp (6 g) Kosher salt (such as Diamond Crystal)

Instructions

  1. Preheat and melt butter: Preheat the oven to 450° F with a rack positioned in the center. Place the butter cubes in an 8-by-8-inch glass baking dish and transfer the dish to the oven to melt the butter, which should take about 6 minutes. Watch carefully to prevent burning. Remove from oven and set aside.
  2. Mix dry ingredients and add buttermilk: In a medium bowl, whisk together the flour, baking powder, sugar, and salt. Using a rubber spatula, stir in the room-temperature buttermilk just until no visible streaks of flour remain. Avoid overmixing to maintain a tender texture.
  3. Combine dough with melted butter: Pour the biscuit dough into the baking dish containing the melted butter. Carefully spread the dough evenly; the butter will naturally rise to the top.
  4. Score the biscuits: Using a sharp knife or metal pastry cutter, cut the dough into 9 equal-size squares. The cuts will close up somewhat after cutting; make additional passes over the cuts, wiping the blade between each to maintain clean cuts.
  5. Bake the biscuits: Bake for 22 to 25 minutes until the edges start to crisp and the tops turn golden brown. Rotate the pan halfway through baking for even cooking.
  6. Cool and serve: Allow the biscuits to cool for about 3 minutes so they can soak up the butter bubbling at the bottom of the dish. Run a knife along the edges and through the cuts to separate the biscuits, then serve warm and fresh.

Notes

  • Buttermilk Note: If short on time, warm the buttermilk by placing it in a Pyrex measuring cup and heating for about 20 seconds in the microwave. It should be lukewarm, not hot.
  • Keep a close eye on the butter when melting to avoid burning, which can affect the flavor.
  • Do not overmix the dough to ensure the biscuits stay tender and flaky.
