This Burrata Cheese Appetizer features perfectly roasted bell peppers and garlic, combined with creamy burrata cheese and accented with fresh basil and aged balsamic glaze. Served with crusty Italian baguette, it’s a vibrant and elegant starter that’s perfect for any gathering or light meal.

  • Total Time: 1 hour 40 minutes
  • Yield: 6 servings

Ingredients

Vegetables

  • 5 Large Bell Peppers (Green, Red, Yellow, Orange)
  • 5 Garlic Cloves (smashed, not cut)
  • 6 Basil Leaves (fresh, chopped)

Dairy

  • 1 8 oz. Container Burrata Cheese (2 balls)

Oils and Vinegar

  • ½ Cup Extra Virgin Olive Oil
  • 1 Tbsp. Thick Aged Balsamic Vinegar or Glaze

Other

  • Fresh Italian Baguette (for dipping, warmed or room temperature)
  • Salt and freshly cracked black pepper (to taste)

Instructions

  1. Preheat the oven: Set your oven to 400° F to prepare for roasting the peppers and garlic, ensuring even cooking and a slight char.
  2. Prepare the vegetables: Slice the bell peppers into thin strips around ¼ inch wide. Place them on a baking sheet along with the smashed garlic cloves. Season liberally with salt and freshly cracked black pepper.
  3. Oil and roast: Drizzle the peppers and garlic generously with about ½ cup of extra virgin olive oil, coating evenly. Roast in the oven for approximately 25 minutes until the peppers develop a light char.
  4. Cool and chill: Once roasted, transfer the entire contents of the pan, including the oil, into a shallow serving dish. Let it chill for at least one hour or until it reaches room temperature, allowing flavors to meld.
  5. Assemble with burrata: Chop the burrata cheese balls into bite-sized pieces and place them in the center of the roasted peppers and garlic mixture in the serving dish.
  6. Garnish and serve: Drizzle the aged balsamic vinegar or glaze over the entire dish. Sprinkle chopped fresh basil leaves on top. Serve immediately alongside warm or room temperature crusty Italian baguette for dipping.

Notes

  • Use thick aged balsamic vinegar or balsamic glaze for the best flavor and presentation.
  • The olive oil from roasting adds richness, so do not drain it from the peppers.
  • For best results, use a mix of colored bell peppers to add visual appeal and flavor variety.
  • This appetizer can be served at room temperature or chilled, depending on preference.
  • To warm the baguette, heat in the oven at 350°F for 5-7 minutes before serving.
