This Buffalo Chicken Spinach Dip is a creamy, spicy appetizer combining tender shredded chicken, fresh spinach, and a flavorful blend of buffalo sauce, cream cheese, and sharp cheddar. Perfectly broiled for a bubbly, golden cheese topping and garnished with green onions, this dip is an irresistible crowd-pleaser for game days or casual gatherings.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Chicken and Seasoning:

  • 10 oz. Chicken Breast
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Onion Powder
  • 1/4 tsp. Kosher Salt
  • 1/2 tsp. freshly cracked Black Pepper
  • 1 tbsp. Oil such as Vegetable, Avocado, or Olive

Buffalo Spinach Dip:

  • 1/2 cup Red Hot Sauce such as Frank’s
  • 1/2 cup Whipped Cream Cheese
  • 2 cups fresh Baby Spinach, packed
  • 3/4 cup shredded Sharp Cheddar*
  • 1/3 cup Sour Cream

Toppings:

  • 1/4 cup shredded Sharp Cheddar
  • Chopped Green Onion

Instructions

  1. Prepare the chicken: Pat the chicken breast dry. If thick, slice it in half lengthwise to create two thinner halves for quicker, even cooking. Set aside.
  2. Season the chicken: Mix garlic powder, onion powder, salt, and black pepper in a small bowl. Season the chicken evenly with this mix, reserving 1/2 teaspoon for the dip later.
  3. Cook the chicken: Heat oil in a large non-stick pan over medium heat. Cook chicken for 2-4 minutes per side until browned and cooked through. Remove from heat and transfer to a bowl to rest for five minutes.
  4. Shred the chicken: Shred the rested chicken in the bowl. Return the shredded chicken and its juices to the pan over medium-low heat.
  5. Make the buffalo chicken base: Stir in the hot sauce and reserved chicken seasoning. Cook for 2-3 minutes, stirring occasionally to incorporate flavors.
  6. Add cream cheese: Stir in whipped cream cheese until fully combined and melted into the mixture.
  7. Wilt the spinach: Add fresh baby spinach to the pan, cooking 3-4 minutes until it wilts down and mixes evenly into the dip.
  8. Combine remaining ingredients: Stir in sour cream and 3/4 cup shredded sharp cheddar until everything is fully combined into a creamy dip.
  9. Broil the dip: Transfer the dip to an oven-safe bowl. Sprinkle the top with 1/4 cup shredded cheddar and broil for 2-3 minutes until the cheese is bubbly and golden brown.
  10. Garnish and serve: Sprinkle chopped green onions on top and serve the dip hot with your favorite chips, crackers, or veggies.

Notes

  • Grating cheddar from a block is recommended because pre-shredded cheeses contain anti-caking agents that prevent them from melting smoothly into the dip.
